These air fryer buffalo chicken meatball bowls are the latest in what’s becoming a full buffalo chicken takeover on this blog, but I’m not mad about it. Buffalo sauce hits this sweet spot of spicy and vinegary that I haven’t gotten tired of yet, and it’s one ingredient doing the work of an entire spice rack. No measuring out six different things, no mixing your own blend. Just buffalo sauce.
The meatballs get air fried until they’re crispy on the outside, tossed in buffalo sauce, and served over rice with a crunchy coleslaw and a high-protein ranch. 43 grams of protein per bowl, and you’re eating in 25 minutes.

Why You’ll Love These Buffalo Chicken Meatball Bowls
- 43 grams of protein per bowl, which is enough to keep you full through the evening instead of fishing through the cabinet for chips an hour later.
- Ready in 25 minutes, and since the air fryer handles the meatballs, you’re not standing over a stove or scrubbing a sheet pan after.
- Five different vegetables between the coleslaw mix, carrots, celery, and green onions. You’re getting a real serving of veggies without it feeling like a salad.
- Great for meal prep. Double the batch and you’ve got two extra lunches for the week. The meatballs and ranch keep well for 4 days in the fridge.
- The high-protein ranch alone is worth making this. Greek yogurt, ranch seasoning, and it tastes like the real thing with a fraction of the fat.

Key Ingredients
- Ground chicken is lean, high in protein, and picks up whatever flavor you throw at it. That’s exactly what you want when buffalo sauce is involved.
- Panko breadcrumbs keep the meatballs tender and moist on the inside while the air fryer crisps up the outside. Skip them and you’ll end up with dense little hockey pucks.
- Garlic powder, onion powder, and smoked paprika are technically optional if you’re in a rush, but they round out the flavor beyond just buffalo.
- Buffalo sauce is the star of this entire dish and, at this point, possibly the love of my life. One bottle. No mixing. No measuring.
- Microwave rice is a shortcut I’m not apologizing for. You can absolutely make your own, but a microwavable pouch saves you 15 minutes and one less pot to wash. Your call.
- Coleslaw mix is cheap, easy, and gives you a serving of fiber and micronutrients without any chopping. The crunch is what makes the bowl feel like a real meal and not just meatballs on rice.
- Carrots, celery, and green onions bring color and freshness to the bowl. Between these and the coleslaw, you’re covering vitamins A, C, and K without thinking about it.
- Blue cheese crumbles are optional, but if you’re a blue cheese girl like me, you already know you’re adding them.
- The high-protein ranch comes together in about two minutes: greek yogurt, mayo, ranch seasoning, and a splash of milk. It adds a few extra grams of protein to every bowl and honestly tastes better than bottled.

How To Make It
As with all of my 30-under-30 recipes, I try to keep things low-fuss, and everything comes together while the air fryer does the work.
Form, air fry, and coat your meatballs
Mix your ground chicken with panko, egg, and the seasonings until just combined. Form into 10 to 12 small balls, air fry at 400F for 10 to 12 minutes, until they’re crispy on the outside and still moist on the inside. Toss them straight into the buffalo sauce while they’re hot so they soak it all up.
Make the slaw
Toss the coleslaw mix with a little greek yogurt, some apple cider vinegar, and a pinch of salt. And that’s it.
Make the high-protein ranch
Whisk together greek yogurt, mayo, and a tablespoon of ranch seasoning. Add a splash of milk or water to thin it until you’ve got your desired consistency. Two minutes, tops.
Assemble your bowls
Start with the microwave rice as your base. Add the buffalo meatballs, coleslaw, shaved carrot, and thinly sliced celery. Top with green onions and blue cheese crumbles if you’re using them, then drizzle on your high-protein ranch.
If you don’t have an air fryer, no worries. Add the meatballs to baking sheet and bake at 400F for 15 to 18 minutes. Sadly, they won’t get quite as crispy on the outside, but they’ll still taste amazing tossed in the buffalo sauce.

Easy Swaps And Variations
Lazy Girl Version
If you’re a lazy girl like me, there are a few quick swaps to make this whole thing extra lazy and eeeextra easy.
Storage & Meal Prep
These buffalo chicken meatball bowls are one of my favorite recipes to double. Make a bigger batch and you’ve got lunch sorted for the next two days.
Everything keeps for up to 4 days in the fridge. Store the meatballs, rice, slaw, and ranch in separate containers so nothing gets soggy. When you’re ready to eat, reheat the meatballs and rice, add your toppings, and drizzle on the ranch.
The meatballs also freeze well for up to three months. Thaw overnight in the fridge and reheat in the air fryer for a few minutes to get the crispiness back.

FAQ
It depends on your buffalo sauce. Most store-bought buffalo sauces are mild to medium, so if you or your kids are sensitive to heat, just grab a mild one. If you want more of a kick, add a dash of cayenne to the meatball mix or use a hot buffalo sauce.
Yep, easy swap. Frank’s RedHot is actually a bit lower in calories than Frank’s Buffalo Sauce since it doesn’t have the added butter. The flavor is a little more vinegar-forward, but it works well here.
I wouldn’t skip them entirely because they’re what keeps the meatballs from drying out. Almond flour is a good sub if you want to keep it low carb. Use the same amount.
For sure. Spread the meatballs on a lined baking sheet and bake at 400F for 15 to 18 minutes, flipping once halfway through. They won’t get quite as crispy as the air fryer version, but they still taste great tossed in the sauce.
This works really well. Cut 12 oz of chicken breast into bite-sized pieces, toss with a little oil and the same seasonings, and air fry at 400F for about 8 to 10 minutes until cooked through. Then toss in the buffalo sauce the same way. You skip the breadcrumbs and egg entirely, and the protein stays about the same.

Notes
- Swap for Ground turkey: Ground turkey works the same way here. Cook time and macros are nearly identical, so it just comes down to what you like better.
- Frank’s RedHot vs buffalo sauce: Frank’s RedHot works as a straight swap. It’s a little more vinegary and slightly lower calorie since it doesn’t have the added fat.
- DIY ranch seasoning: No ranch seasoning? Mix together 1 tsp garlic powder, 1 tsp onion powder, ½ tsp dried dill, ½ tsp dried parsley, ¼ tsp salt, and ¼ tsp black pepper.
- Lazy girl version: Skip the homemade slaw and ranch entirely. Use bagged coleslaw with store-bought dressing, bottled ranch, and microwave rice. Still make the meatballs though. Those are the whole point.
