These Almond Croissant Overnight Oats have all the nutty, buttery flavor of the famous pastry, but in a creamy, high-protein jar with over 40 grams of protein.

I’ve always loved the idea of starting my day with something a little luxurious, like the almond croissant I’d order at a café in Paris.

But as much as I adore the buttery, nutty layers of that pastry, I don’t exactly want to begin my mornings with a sugar crash.

So I turned it into overnight oats.

They have the same cozy, nutty flavor I crave, but with enough protein to keep me satisfied for hours.

Five minutes of prep the night before, and you wake up to something that feels indulgent but actually has 40g of protein behind it.

Key Ingredients

  • Rolled oats: I prefer Gluten-Free Quick Oats in this recipe, but rolled oats will also work.
  • Greek yogurt: Adds creaminess and a big protein boost so your breakfast actually keeps you full.
  • Vanilla protein powder: Brings extra sweetness and structure while getting each serving over 40 grams of protein.
  • Almond milk: Keeps the oats creamy with a light, nutty undertone.
  • Almond butter: Rich, nutty, and reminiscent of the almond filling in a croissant.
  • Almond extract: A little Almond Extract goes a long way for that distinct almond pastry flavor.
  • Vanilla extract & maple syrup: Round out the flavor with natural sweetness and warmth.
  • Sliced almonds: Add crunch and texture, especially when toasted.

Tips & Variations

  • Toast your almonds – Toasting the sliced almonds in a dry skillet for a few minutes brings out a deeper, nuttier flavor and makes the oats feel more pastry-like.
  • Add a hidden almond butter layer – When potting your oats, spoon half the mixture into the jar, add a small dollop of almond butter in the middle, then top with the rest. It’s like finding the filling inside a croissant.
  • Swap the protein powder – Try chocolate or almond-flavored protein powder for a twist on the classic vanilla base.
  • Warm it up – These are traditionally served cold, but you can microwave them for 30 to 60 seconds if you prefer a warm version.
  • Batch-prep it – Make 3 to 4 jars at once and store in the fridge for easy grab-and-go breakfasts all week.

Storage & Meal Prep

These almond croissant overnight oats stay fresh in the fridge for up to four days, which makes them great for meal prep.

Store them in airtight jars or containers so they’re easy to grab on busy mornings. If you’re adding toppings like almonds or powdered sugar, keep those separate until just before serving so they stay crunchy.

The oats will thicken as they sit, so stir in a splash of almond milk before eating to loosen them up.

For the easiest routine, make a batch of three or four jars at once. The flavor actually gets better as the oats rest, so you end up with a week of creamy, bakery-inspired breakfasts with almost no effort.

FAQ

What kinds of oats are best for overnight oats (rolled, quick, or steel-cut)?

Rolled oats and quick oats both work. Quick oats break down more and give you a smoother texture, while rolled oats hold their shape a bit better. Steel-cut oats don’t soften enough overnight, so I’d skip those.

Can I make these without protein powder?

Totally, but the protein count will drop. You can add an extra scoop of Greek yogurt to make up some of the difference or a scoop of collagen powder which is totally flavorless and won’t change the texture.

Do I really need almond extract? Are there any replacements?

It makes a big difference in getting that bakery almond flavor, so I’d keep it if you can. If you don’t have it, vanilla extract on its own still tastes great, you just won’t get that almond croissant vibe.
