Ingredients You’ll Need

  • Low-fat Greek yogurt – The creamy, high-protein base that gives this bake its custard-like texture.
  • Vanilla protein powder – Adds natural sweetness and boosts the protein content to 30 grams per serving.
  • Large egg white – Helps the yogurt mixture set and adds lightness without extra calories or fat.
  • Honey or maple syrup – Optional, but a touch enhances sweetness and balances the tart berries.
  • Vanilla extract – Adds warm, bakery-style flavor that complements the fruit.
  • Fresh raspberries – Juicy and slightly tart, they add pockets of flavor and a pop of color throughout the bake.
  • Pinch of salt – A small amount that makes the flavors pop and keeps the sweetness balanced.

How to Make This Berry Yogurt Bake

  1. Prep your ramekin and oven
Lightly grease an 8-ounce ramekin and preheat the oven so it’s ready to go once you mix your ingredients.
  2. Whisk together the base
Combine Greek yogurt, vanilla protein powder, an egg white, a splash of vanilla, and a pinch of salt until smooth and creamy.
  3. Sweeten if desired
Add a drizzle of honey or maple syrup if your protein powder isn’t very sweet or you prefer a dessert-like flavor.
  4. Fold in fresh berries
Gently stir in most of the raspberries, saving a few to sprinkle on top for a pretty finish.
  5. Bake until custardy
Pour the mixture into the ramekin and bake until set at the edges but still slightly jiggly in the center. It will firm up as it cools.
  6. Cool and enjoy
Let it rest for a few minutes before digging in, or chill it for a make-ahead breakfast you can grab straight from the fridge.

    1. I just made some for breakfast to confirm, and it also works without protein powder. It’s slightly less thick but still delicious! I recommend adding a bit more sweetener.
