Just like the taco, but in soup form. This Crockpot Birria Soup with Sweet Corn & Crispy Tortilla Strips takes everything you love about traditional birria and transforms it into a comforting bowl of soup you’ll want to make again and again.

Birria has long been one of my favorite Mexican dishes. There’s just something about the rich, smoky broth, the tender beef, the toppings that make it feel special every time.

But instead of tucking it all into tacos, this version turns those same deep, complex flavors into a warming soup.

The beef slow cooks in a chili-tomato broth until it’s fall-apart tender, then it’s finished with sweet corn, fresh lime juice, and a generous handful of crispy tortilla strips on top.

It’s hearty, nourishing, and the kind of recipe that makes your kitchen smell incredible all day long.

The Origin Story of Birria

I want to take a moment to introduce the super interesting origin story of birria, because it shows how a dish that started with humble beginnings became one of Mexico’s most beloved traditions.

Birria has its roots in the Mexican state of Jalisco, where it was first created during the colonial period.

When the Spanish introduced goats to the region, the animals multiplied quickly and were often seen as pests because they damaged crops.

Locals, however, found a way to turn this problem into something delicious. They began slow-cooking goat meat with an aromatic blend of dried chiles, herbs, and spices until it became tender and flavorful.

The dish was called birria, a word that loosely translates to “something of little value,” a nod to how goat was once considered undesirable meat.

Over time, birria became anything but ordinary. It grew into a celebratory meal, traditionally served at weddings, holidays, and family gatherings, and eventually spread beyond Jalisco to become a beloved Mexican classic.

Today, beef is often used in place of goat, and you’ll find birria enjoyed as tacos, consommé, or hearty stews across Mexico and beyond.

Key Ingredients

  • Beef chuck roast: The perfect cut for slow cooking. It becomes melt-in-your-mouth tender and infuses the broth with rich flavor.
  • Dried guajillo chiles: Mild and slightly fruity, Guajillo Chiles give the soup its signature depth of flavor without too much heat.
  • Dried ancho chiles: Earthy and a little sweet, Ancho Chiles add richness and balance to the chili base.
  • Chipotle in adobo: Adds a touch of spice and a subtle smokiness that rounds out the chili base.
  • Fire-roasted tomatoes: Bright and slightly charred, they balance the richness of the broth with a hint of acidity.
  • Beef bone broth: Nourishing, high in protein, and layered with flavor, Beef Bone Broth is the foundation of the soup.
  • Corn kernels: Sweet pops of flavor that contrast beautifully with the smoky broth.
  • Fresh lime juice: A squeeze at the end lifts all the flavors and brightens each spoonful.
  • Crispy tortilla strips: The crunchy finishing touch that makes every bite irresistible.

For the richest flavor and an extra boost of protein, I recommend making your own Slow Cooker Bone Broth the day before and using it as the base of this soup. It gives the broth incredible depth that store-bought can’t quite match.

How to Make This Crockpot Birria Soup

Making birria soup at home might sound intimidating, but the crockpot does most of the work for you. Here’s how to bring it all together step by step:

Soak the chiles: Place the guajillo and ancho chiles in a small pot, cover with boiling water, and let them soften. Reserve some of the soaking liquid for blending.

Other Cooking Methods

Don’t have a crockpot? No problem! This birria soup can be adapted to the stovetop or Instant Pot with just a few tweaks.

Stovetop Method

  1. Prepare the chili sauce as directed.
  2. Add it to a large Dutch oven or heavy-bottomed pot along with the beef, broth, and spices.
  3. Bring to a simmer, cover, and cook over low heat for 2 to 3 hours, or until the beef is tender and easily shreds.
  4. Stir in the corn and lime at the end before serving.

Instant Pot Method

  1. Blend the chili sauce as written, then add it to the Instant Pot with the beef, broth, and spices.
  2. Lock the lid and cook on high pressure for 60 minutes. Let the pressure release naturally for 15 minutes before venting the rest.
  3. Remove and shred the beef, stir it back into the broth, and finish with corn and lime juice.

Both of these methods deliver the same smoky, flavorful results as the crockpot version — just a little faster.

Serving Suggestions

This Crockpot Birria Soup is satisfying on its own, but a few simple sides and toppings can make it feel even more special:

  • Fresh toppings: Load up with diced onion, fresh cilantro, avocado slices, or a sprinkle of queso fresco for extra richness.
  • Warm tortillas: Serve with warm corn or flour tortillas on the side for scooping up the broth.
  • Mexican rice: A small scoop of rice stirred into the soup makes it even more filling.
  • Pickled veggies: Try quick-pickled red onions or jalapeños for a tangy, spicy contrast.

Storage & Meal Prep

This birria soup stores beautifully, making it a great option for meal prep.

Keep leftovers in an airtight container in the refrigerator for up to 4 days and reheat gently on the stovetop or in the microwave.

For longer storage, freeze the soup (without toppings) for up to 3 months and add fresh corn, lime, and garnishes after reheating to preserve their texture and flavor.

Store tortilla strips separately in an airtight container at room temperature so they stay crisp, and add them just before serving.

And if cozy soups are your thing, don’t miss my High-Protein Crockpot Chicken Tortilla Soup. It’s another reader favorite that’s hearty, flavorful, and made for topping with crispy tortilla strips.

FAQ

Can I make birria soup without a crockpot?

Absolutely! You can simmer the soup on the stovetop in a large Dutch oven or heavy pot. Cook the beef low and slow for 2 to 3 hours, until it’s tender enough to shred. Otherwise, all other instructions stay the same.

What cut of beef is best for birria soup?

Beef chuck roast is the most popular choice because it becomes fall-apart tender after slow cooking. Short ribs or brisket also work well if you want an even richer broth.

Is birria soup spicy?

Traditional birria has a smoky, mild heat from the dried chiles. This soup isn’t overly spicy, but you can adjust it by adding an extra chipotle pepper or a pinch of cayenne for more heat.

Can I make this recipe ahead of time?

Totally! In fact, the flavors deepen as it sits, making the soup even better the next day. Just store it in the fridge and reheat gently before serving.

What toppings go best with birria soup?

The toppings listed here are inspired by birria tacos. Crispy tortilla strips, fresh cilantro, diced onion, avocado slices, queso fresco, or a squeeze of lime all make delicious finishing touches.
