FAQ

What are some easy fall dinner recipes?

My go-to easy fall dinners are the fall sausage and veggie sheet pan, the Italian penicillin soup, and the crockpot butternut squash and red lentil curry. Each one takes about 15 minutes of hands-on time and the oven, stove, or slow cooker does the rest.

Can I meal prep these fall dinners?

Yes. The soups, chilis, and crockpot recipes all reheat really well, so I like making a big batch on Sunday and eating it for lunch during the week. The grain and bean salads also hold up in the fridge for a few days if you keep the dressing on the side.

Are these fall dinners healthy?

Every recipe here is one of my own, built around protein and seasonal produce like squash, apples, and sweet potatoes. Most of them land between 30 and 50 grams of protein per serving and under 600 calories, and you can see the exact numbers on each recipe card.
