This is my take of a Fall Harvest version of her classic dense bean salad formula with cannellini and butter beans, kale, apple, pomegranate, pumpkin seeds and crumbled goat cheese.
If you’re a lover of a fall salad but are looking for something a bit more hearty that can work as meal prep too, this is the recipe for you.
It takes all the same flavors but replaces the lettuce for beans making it higher protein, high in fiber, and delicious even after 3 or 4 days in the fridge.

Key Ingredients
You only need short list of ingredients and several of them are pantry staples.
- Cannellini & butter beans: Any combo of white beans will work here but I prefer cannellini and butter for creaminess and bite. Make sure you rinse and dry them well to avoid a soggy salad.
- Kale: I like lacinato for the color and flavor but any finely chopped kale or even thinly shaved brussels sprouts will work.
- Apple: A classic fall flavor that you often find in a harvest salad, apple adds sweetness and crunch. I like honeycrisp or pink lady best.
- Pomegranate seeds: Colorful, tarte, and a burst of flavor in every bite. Can also be swapped for dried cranberries.
- Pumpkin seeds: I like salted roasted pumpkin seeds for the nuttiest flavor and crunchiest texture. You can also go for pecans.
- Goat cheese: Tangy, salty, and creamy goat cheese is one of my favorites to add to salads.
- Maple dijon vinaigrette: Everything gets dressed in a simple maple dijon vinaigrette.

How to Make It
Super easy 4 step process with no cooking required. Here’s how to make this fall dense bean salad.
Massage the kale
Add your de-stemmed and thinly sliced kale to a bowl with a small drizzle of olive oil and pinch of salt. Massage until darkened in color and slightly softened.
Drain & dry beans
This is a critical step. Drain, rinse, and throughly dry your beans. I like to let mine sit in a colander for about 5 minutes before rolling lightly in a clean kitchen towel. Wet beans = wet salad.
Chop, chop, chop
Dice you apple and thinly slice your shallot and add to your bowl with the rest of the ingredients.
Make the dressing & assemble
Add all the dressing ingredients to a jar and shake well until smooth and creamy then toss the salad. If meal prepping, keep the pumpkin seeds and goat cheese separate until serving.

Victoria’s Tips
Here are a couple of my tips to ensure you get the best possible result.
- Season more than you think. Beans love salt. If the salad is tasting a little bland or even like it’s missing something, it’s probably salt.
- Keep the pumpkin seeds and goat cheese separate. If meal prepping, keep these two stored separately for the best texture and flavor.
- Add some acid to the apples. If planning to store, put a splash of light colored vinegar or lemon juice on the apple so it doesn’t turn brown.
- Don’t skip the massaging step. The kale really does taste so much better if you take just a couple of minutes to massage and soften it.
Storage & Meal Prep
This fall dense bean salad is designed for meal prep. Store in an airtight container for up to 4 days. It tastes best on day 2 and day 3 once all the flavors have combined.
Store the pumpkin seeds and goat cheese separately for the best texture and flavor.

Instructions
- Put 1 large bunch lacinato kale, stems removed and leaves very finely shredded, in a wide serving bowl with a pinch of flaky salt and 1 teaspoon of the 2 tbsp extra virgin olive oil. Scrunch it with your hands for 30 seconds, until the leaves darken and soften.
- Drain and rinse 1 can cannellini beans and 1 can butter beans, then roll them on a clean kitchen towel until they are properly dry.
- Dice 1 large apple, unpeeled, into small pieces and slice 1 large shallot paper-thin.
- To a jar, add 3 tbsp apple cider vinegar, the remaining olive oil, 1 tbsp maple syrup, 1 tbsp dijon mustard, 1 small grated garlic clove, 1 tsp thyme, and salt, to taste. Shake it, taste, and adjust to preference.
- Add the beans, diced apple, shallot, ½ cup pomegranate seeds, and ⅓ cup roasted salted pumpkin seeds to the kale, pour over the dressing and toss well, then taste and add more salt if needed.
- Scatter over 3 oz goat cheese, crumbled, and enjoy!

Notes
- Make it a meal. Add shredded rotisserie chicken or hard-boiled eggs to add more protein.
- Do not toss the goat cheese in. Keep the goat cheese crumbles separate until ready to enjoy.
- Apple of choice. Honeycrisp or Pink Lady are my apples of choice for this salad.
- Swaps. Chickpeas work in place of either can of beans. Shaved brussels sprouts work for the kale, and curly kale works too but needs shredding even finer. If you cannot get pomegranate, dried cranberries gives you the same sweet bite.
- Meal prep. Keeps 4 days in the fridge. If you are portioning ahead, keep the pumpkin and goat cheese separate.
