I grew up in California, which means In-N-Out isn’t fast food to me, it’s a whole personality trait.
My order has always stayed the same: Double-Double Animal Style with chopped chilis. I never mix it up.
Now that I live in Europe, the nearest In-N-Out is over 5,000 miles away, so I get to have it a lot less often.
I did the only reasonable thing and recreated my order at home, in a bowl, and healthy enough that I can keep it in regular rotation.
All the same flavors, no sacrifices, and 63 grams of protein per serving.

Why I Love This Burger Bowl
- In-N-Out flavor. It actually tastes like an Animal Style Double-Double, just in a bowl format.
- 63 grams of protein per bowl. Whether your goal is to lose weight, gain muscle, or just stay full, you’re gonna love this dinner.
- Comes together in about 30 minutes. There are a couple of steps here, but they’re all super simple and well worth the effort.
- Perfect for meal prep. This is the kind of meal I love to cook for dinner, then make a double batch so my prep for the week is done too.

Key Ingredients
These high-protein burger bowls rely on a few staples, but really every element is customizable based on what you like or what you have in the fridge.
- Lean ground beef. I like to cook mine crumbled instead of in a patty, because it’s easier to eat in bowl form. But I keep that mustard-fried patty flavor by adding the mustard during the browning phase.
- American cheese. Not gonna lie, this isn’t the healthiest part of the meal, but for me, American cheese is kind of a non-negotiable. Cheddar just doesn’t come close.
- Air fryer fries. While In-N-Out doesn’t make the best fries around town, a couple of homemade fries are a great addition to this bowl. They add bulk, healthy carbs, and something to dip into the special sauce.
- Grilled onions. Animal Style is a non-negotiable for me, and the grilled onions are a key part of it. It’s an extra step and an extra pan to clean, but well worth it in my opinion.
- Veggies. This one’s kind of salad adjacent, so it starts with a bed of lettuce. I also add cherry tomatoes, some pickles (if those count as a veggie), and I cannot eat my In-N-Out without chopped chilis, so those are making it into my bowl too.
- Special sauce. Easy to make, and easy to make healthier by using greek yogurt instead of mayo. It acts as the dressing and a dipping sauce for the fries.
If you’ve always wanted to try making your own pickles, try my Lacto-Fermented Garlic Dill Pickles. It’s a recipe I’ve perfected over years of experimentation.
How to Make It
This burger bowl is designed to be easy. It takes a couple of steps to get all that In-N-Out flavor, but everything comes together in about 30 minutes.
- Air fry your fries
Season a russet potato cut into quarter-inch fries, lay them in the air fryer basket in a single layer, and air fry until golden and crispy. - Grill your onions
While the fries cook, grill your onions in a bit of olive oil until soft and sweet. Remove from the pan and set aside. - Make the special sauce
Stir together greek yogurt, ketchup, dill pickles, yellow mustard, sugar, and smoked paprika in a small bowl, then taste and adjust the seasoning. - Cook your “burger”
In the same skillet you cooked the onions in, heat over medium-high and add your ground beef, breaking it into crumbles and cooking until browned. Push the beef to one side, add your mustard to the pan, and stir it through the crumbles so it sizzles and coats the meat. - Assemble
Divide your lettuce and veggies between two bowls and top with the beef, grilled onions, and melted American cheese. Add your fries, special sauce, more pickles, and chopped chilis.

Victoria’s Tips
Here are a couple of tips to make sure you get the full In-N-Out flavor.
- Soak your fries. For extra-crispy fries, soak the cut potatoes in cold water for 15 minutes before air frying. Pat them completely dry before tossing with oil and seasoning.
- Fully brown your meat. Taking your meat from gray to brown takes a little patience, but it adds so much flavor. Once it’s cooked through and crumbly, turn up the heat slightly and keep cooking until you get a deep golden color.
- Don’t skip the mustard. It feels like a small step that won’t add much, but the mustard-fried patty is one of the things that makes In-N-Out so special. Don’t skip it.

Storage & Meal Prep
These high-protein burger bowls are an incredible meal prep option. Store all the ingredients separately in an airtight container in the fridge for up to 4 days.
I like to cook a double batch for dinner and have lunches ready for the week.
FAQ
Using a pound of lean ground beef, split between two bowls, does most of the work here. You get a few extra grams from the greek yogurt and American cheese, which is how you end up with 63 grams of protein per bowl. Believe me, this will keep you full and satisfied for hours.
Yes, as written, it’s gluten-free. If you make any substitutions, just double-check the labels.
Totally. Skip the cheese or use a non-dairy alternative, and use mayo instead of greek yogurt in your special sauce.
It’s an incredible recipe for meal prep. Just keep your components separate and assemble when you’re ready to eat. That’ll keep anything from getting soggy.
Chopped chilis are an off-menu In-N-Out item that took me a little too long to learn about, but I’ve never gone back since. They’re basically chopped pickled chilis you can get on your burger or on the side, and they add a bit of heat and tang. Totally optional if spice isn’t your thing.

Equipment
Ingredients
Instructions
- Toss 1 medium russet potato (cut into ¼-inch fries) with 1 tsp garlic powder, ½ tsp smoked paprika, and salt, to taste. Lay into the air fryer basket in a single layer and spray with cooking spray.
- Air fry at 380°F for 15 to 18 minutes, shaking the basket halfway, until deep golden and crisp.
- While the fries cook, heat 1 tsp olive oil in a skillet over medium heat. Add 1 diced yellow onion and cook for 8 to 10 minutes, stirring often, until soft and jammy. Scrape onto a plate and wipe the pan.
- While the onions and fries cook, stir together ¼ cup greek yogurt, ¼ cup ketchup, 2 tbsp finely chopped dill pickles, 1 tbsp dill pickle brine, 1 tbsp chili brine (optional), 1 tbsp yellow mustard, ½ tsp smoked paprika in a small bowl. Taste and adjust seasoning. Chill while you finish cooking everything else.
- Heat the same skillet you cooked the onions in over medium-high until hot. Add 1 lb lean ground beef and break it into crumbles. Cook for 5 to 6 minutes until browned and cooked through.
- Push the beef to one side, add 2 tbsp yellow mustard to the pan, and stir it through the crumbles so it sizzles and coats the meat. Season with salt, to taste.
- Spread the grilled onions over the beef, lay 2 slices american cheese on top, and cover the pan for about 1 minute until the cheese melts.
- Divide 4 cups lettuce between two bowls. Top each with half the cheesy mustard beef and onions, half the air fryer fries, 1 cup cherry tomatoes, ¼ cup sliced dill pickles, and 2 tbsp chopped pickled chilis (optional), split between the bowls.

Notes
- No air fryer? Bake the fries at 425°F (220°C) on a parchment-lined sheet pan for 25 to 30 minutes, flipping halfway, until golden and crisp.
- Prefer a classic patty? Form the seasoned beef into 2 thin, wide patties, smear the tops with the mustard, and lay them mustard side down in a hot pan. Cook 2 to 3 minutes until the crust caramelizes, then flip, top with the cheese, and melt.
- To meal prep, keep the cooked beef, sauce, and chopped veggies in separate containers and make the fries fresh (or skip), then assemble just before eating so nothing goes soggy.
- To make it dairy-free, swap the greek yogurt in the special sauce for light mayo and use your favorite dairy-free cheese or leave the cheese off.
