High-protein chia seed yogurt parfait layered with strawberries and blackberries in a glass jar topped with mint

If you’re looking for easy high-protein breakfast meal prep ideas, then you have to try this chia yogurt parfait.

It’s basically like the combination of a chia seed pudding and a yogurt parfait (um, duh.)

What I love about it is that you get the benefits of both. Protein from the yogurt and fiber from the chia seeds, along with healthy fats from both. Throw some berries on top, and you’ve also got some amazing antioxidants.

It’s actually hard to think of a healthier way to start your day.

The best part? It only takes 5 minutes to prep, and you have a week’s worth of breakfast waiting to go in the fridge.

Why You’ll Love It

  • Ready in under 5 minutes. All you have to do is whisk everything together, layer it into jars, and just like that it’s done. No cooking, no fancy equipment required, and no overnight wait either.
  • 35g of protein per serving. With the optional scoop of vanilla protein powder, you get 35g of protein per serving. Without it, you’re still around 25g from the greek yogurt and chia seeds alone. Either way, it’s pretty much guaranteed to keep you full all morning long.
  • A whole week of breakfast ready to go. All you have to do is simply mix the ingredients together, then layer a few jars on Sunday, and you’ve got grab-and-go healthy breakfast through Thursday. Really couldn’t be easier than that.
  • Real ingredients. Just greek yogurt, chia seeds, berries, a little vanilla, a drizzle of honey, and some optional protein powder. Nothing you can’t pronounce or find at a typical grocery store.
  • 7g of fiber. Between the chia seeds and the berries, you’re hitting 7g of fiber per parfait, which is great for your gut microbiome and keeping you regular.

Key Ingredients

  • Greek yogurt. Any type of greek yogurt or thick yogurt will work. It’s high in protein, and so most brands will give you between 17 and 20 g per serving. Full-fat, low-fat, and fat-free all work great.
  • Chia seeds. They’re doing two jobs. They thicken the yogurt into a pudding texture while also adding a bunch of fiber and healthy omega-3s.
  • Plant-based milk. This helps to loosen up the yogurt a little so the chia can do its thing. All kinds work: almond, oat, coconut, or soy. Pick whatever you like having in the fridge.
  • Vanilla protein powder (optional). If you’re looking to go from the 25g range to the 35g range, a half scoop of vanilla protein powder per serving will easily get you there. I use Simply Tera’s Pure Whey Protein, but any unflavored or vanilla powder works.
  • Honey or maple syrup. A small drizzle just adds a tiny bit of sweetness to balance out the tang of the yogurt, or you can totally skip it.
  • Vanilla extract. Optional, but adds a delicious vanilla flavor that complements everything else so well.
  • Mixed berries. You can use fresh or frozen. I like to go with blueberries, raspberries, sliced strawberries, and blackberries to get a little of each, a little extra fiber, and a ton of antioxidants.
  • Granola. If you want a little crunch on top, I like to use this high-protein, low-sugar granola, but really anything works here. You can even toss in some nuts and seeds.

How To Make It

This chia seed yogurt parfait is pretty hard to mess up because it’s really just a two-step process: mix, then layer.

  1. Mix everything together. In a medium bowl, whisk the greek yogurt, plant-based milk, chia seeds, protein powder (if using), honey, vanilla, and a pinch of salt together until smooth. Let it sit for at least an hour so the chia seeds plump up and the base thickens a bit.
  2. Layer the parfaits. Spoon half the chia seed base into the bottom of the two jars. Add a layer of mixed berries. Add the rest of the chia yogurt mixture. Top with a sprinkle of granola and some extra berries, or even a drizzle of honey or nut butter.

If you like grab-and-go breakfasts like this one, my Almond Croissant Overnight Oats are another one I keep coming back to. Plus, they have 40g of protein per serving.

Victoria’s Tips

Here are some of my tips for the best possible chia seed yogurt parfait.

  • Whisk well. Chia seeds love to clump together. I like to give the base a good whisk, then wait a couple minutes and whisk once more to make sure there are no clumps.
  • Push the fruit up against a glass. If you want a super pretty parfait-looking result, push your berries up against the sides of the jar so that you get to see the gorgeous pops of color and the chia yogurt mixture doesn’t totally cover them.
  • Keep the granola separate until eating. Granola can soften when exposed to moisture, so if you want it to stay super crunchy, just leave it on the side until you’re ready to enjoy.

Ingredient Substitutions

Need to swap something? Here’s what works:

  • Make it dairy-free. Swap the greek yogurt for any kind of dairy-free alternative. You’ll lose some of the protein, but you can always compensate with plant-based protein powder.
  • Plant-based milk or dairy milk. Any milk works. It can be plant-based or normal, whatever fits your preferences and your macronutrient goals.
  • Switch up the fruit. Berries work great here, fresh or frozen, but you can use any fruit you prefer. Go tropical with mango and pineapple, or summery with cherries.
  • Add nut butter. Swap out your granola for your favorite nut butter, or even just a handful of nuts and seeds.

FAQ

Why did my chia yogurt parfait turn out watery?

The most common reason is that you’re not letting it sit long enough. Chia seeds need a solid hour to absorb the liquid and thicken up, so if yours is still looking runny, give it another hour. If it’s still runny after that, you may have used a yogurt that’s on the thinner side, so you can just add another tablespoon or two of chia seeds and then wait until they thicken everything up.

Can I make these overnight?

Totally, and it’s actually one of those recipes that gets a little better the longer it sits. Mix everything up the night before, then cover and stick it in the fridge. By the morning, the chia seeds will be fully plumped up and you’ll be ready for layering.

Do the chia seeds need to soak?

Yep, letting the chia seeds soak with the yogurt for at least an hour is what gives the parfait its thick, creamy texture. Skipping this step means that you’ll have dry seeds and a runny base.

Ingredients

For the Chia Yogurt Base
  • 1½ cups plain greek yogurt
  • ½ cup unsweetened plant-based milk
  • 5 tbsp chia seeds
  • 1 scoop vanilla protein powder, (optional)
  • 2 tsp honey or maple syrup
  • 1 tsp vanilla extract
  • pinch of salt
For the Parfaits
  • 1 cup mixed fresh berries, blueberries, raspberries, blackberries, sliced strawberries
  • ¼ cup granola, (optional)
  • honey or nut butter for drizzling, (optional)
Start Cooking

Instructions

  1. Make the chia yogurt base. In a medium bowl or jar, whisk together 1½ cups plain greek yogurt, ½ cup unsweetened plant-based milk, 5 tbsp chia seeds, 1 scoop vanilla protein powder, 2 tsp honey or maple syrup, 1 tsp vanilla extract, and a pinch of salt until smooth and the chia seeds are evenly distributed. Let sit for 1 hour so the chia plumps and the base thickens, or cover and refrigerate overnight for a thicker, pudding-like texture.
  2. Layer the parfaits. Spoon half of the chia yogurt base into the bottom of two glasses or jars. Top each with a quarter of the 1 cup mixed fresh berries. Repeat the layers with the remaining base and berries.
Sprinkle the parfaits with ¼ cup granola if using and honey or nut butter for drizzling. Eat right away, or chill for up to 4 days for grab-and-go breakfasts.

Notes

  • Yogurt swaps. Plain greek yogurt gives is the creamiest and most filling. Skyr also works and adds a few extra grams of protein per serving. For a dairy-free version, use any thick, plain dairy-free yogurt (coconut, almond, or oat).
  • Milk swaps. Any unsweetened plant-based milk works (almond, oat, coconut, soy, cashew). Use a bit less for a thicker, scoopable base or a bit more for a pourable one. Regular dairy milk works too.
  • Protein powder. The vanilla protein powder is optional but bumps the protein from about 23 grams up to 33 grams per serving.  Simply Tera’s Pure Whey Protein is my favorite.
  • Berries. I’ve used fresh berries but frozen work too. If using frozen, let them thaw on the counter for 10 minutes (or microwave for 20 seconds) so they soften and release their juices before layering.
  • Granola. Any granola works on top, but a low-sugar or high-protein granola keeps this breakfast on the healthier side without sacrificing the crunch.
  • Storage and meal prep. Store covered in the fridge for up to 4 days. To meal-prep a few breakfasts at once, layer the parfaits in 8-ounce jars at the start of the week and keep the granola in a separate small container so it stays crunchy.
