Craving a Chipotle burrito bowl but want something higher in protein and easier to make at home? This copycat Chipotle burrito bowl delivers the same smoky, bold flavors you love, but is made in the air fryer in under 30 minutes.
There’s something about a burrito bowl that just works.
It’s customizable, satisfying, and hits that perfect balance of protein, carbs, and healthy fats. But ordering out can add up quickly, and it’s hard to control portions or ingredients. That’s where this homemade version comes in.

And everything else is intentionally low-effort: microwave cilantro lime rice, canned black beans, and a small scoop of guacamole to finish it off.

It’s the kind of recipe you’ll want to keep in rotation, whether you’re meal prepping for the week or just trying to eat well.

Key Ingredients
- Boneless, skinless chicken thighs: Juicy, forgiving, and ideal for the air fryer. They stay tender while soaking up the smoky chipotle marinade and deliver an impressive amount of protein.
- Chipotle peppers in adobo: The backbone of that signature Chipotle flavor. Smoky, slightly spicy, and deeply savory.
- Bell peppers & red onion: Classic Chipotle-style fajita veggies that caramelize beautifully in the air fryer and add sweetness and texture to the bowl.
- Microwave rice: A true weeknight shortcut. Once warmed, it turns into cilantro lime rice in seconds with fresh lime juice and chopped cilantro.
- Black beans: A simple, hearty addition that adds fiber and makes the bowl feel complete with zero extra cooking.
- Guacamole: Just a small scoop adds creaminess and richness, balancing the smoky chicken and keeping the bowl satisfying.

How to Make It
This copycat Chipotle burrito bowl comes together quickly, with most of the work happening in the air fryer and the rest simply assembled at the end.
Marinate the chicken
Add the chicken thighs to a bowl with the chipotle peppers in adobo, olive oil, lime juice, cumin, smoked paprika, garlic powder, and salt. Toss until the chicken is fully coated. Let it marinate for at least 30 minutes, or longer if you have time.
Prep the fajita veggies
Slice the bell peppers and red onion, then add them directly to the air fryer basket. Lightly coat with cooking spray or a small drizzle of oil and season with a pinch of salt.
Air fry the chicken and veggies
Nestle the marinated chicken thighs among the peppers and onions. Air fry until the chicken is cooked through and lightly charred and the vegetables are tender with caramelized edges, shaking or flipping halfway through for even cooking.
Make the cilantro lime rice
While the chicken cooks, warm the microwave rice according to the package instructions. Stir in fresh lime juice, chopped cilantro, and a pinch of salt.
Assemble the bowls
Dice up the chicken. Divide the cilantro lime rice between two bowls, then top with the chipotle chicken, fajita veggies, black beans, and a small scoop of guacamole.

Tips & Variations
- Dairy-free: This copycat Chipotle burrito bowl is naturally dairy-free as written. Just skip cheese or sour cream if adding extras.
- Gluten-free: Use certified gluten-free chipotle peppers in adobo and microwave rice to keep the entire bowl gluten-free.
- Make it less spicy: Use just one tablespoon of chipotle peppers in adobo or remove the seeds before chopping for a milder heat.
- Swap the protein: This works well with chicken breast, shrimp, or salmon. Adjust cook time as needed.
- Change the grain: Microwave brown rice, cauliflower rice, or quinoa all work depending on your goals.
- Add extra veggies: Zucchini, mushrooms, or poblano peppers can be added to the air fryer with the fajita veggies.
Storage & Meal Prep
For best results, store the chicken and fajita veggies separately from the rice, beans, and guacamole. Keep the cooked chicken and vegetables in an airtight container in the refrigerator for up to 4 days.
Store the cilantro lime rice and black beans in separate containers and reheat just before serving. Guacamole is best added fresh to prevent browning.
When ready to eat, reheat the chicken and veggies in the air fryer or microwave, then assemble the bowls with freshly warmed rice and toppings.
FAQ
Totally! If you don’t have an air fryer, you can cook the marinated chicken and fajita veggies in a large skillet over medium-high heat. Add a small amount of oil, cook the chicken until browned and cooked through, then remove and sauté the peppers and onions until tender and lightly charred. You can also bake everything on a sheet pan at 425°F until the chicken is fully cooked and the vegetables are caramelized.
Yep, chicken breast works well but it cooks faster and can dry out more easily. Cut it into even pieces and reduce the cook time slightly.
It can be. Use certified gluten-free chipotle peppers in adobo and microwave rice to ensure the entire bowl remains gluten-free.
