Brown the meat
Heat olive oil in a large pot, then add the ground beef and let it sear undisturbed until it develops a deep golden crust. This step is key to creating that rich, slow-simmered taste. Break it apart and cook through before moving on.

Other Cooking Methods

Crockpot

  1. Brown the ground beef on the stovetop first to develop flavor, then transfer it to your slow cooker.
  2. Add all remaining soup ingredients except the noodles, basil, and optional heavy cream.
  3. Cook on Low for 6 to 7 hours or High for 3 to 4 hours.
  4. In the last 30 minutes, stir in the broken lasagna noodles and cook until tender.
  5. Stir in fresh basil and optional heavy cream just before serving, then top with the lemon ricotta Parmesan mixture.

Instant Pot

  1. Turn on Sauté mode and brown the beef directly in the pot until golden.
  2. Add onion, garlic, and tomato paste, cooking until fragrant.
  3. Stir in the tomatoes, broth, seasonings, and balsamic vinegar.
  4. Lock the lid and pressure cook on High for 6 minutes, then quick release.
  5. Add the broken noodles and simmer on Sauté mode until tender, about 8 to 10 minutes.
  6. Stir in basil and optional heavy cream before serving and finish with the ricotta topping.

Tips & Variations

  • Make it dairy-free: Use dairy-free ricotta and Parmesan alternatives or leave out all together. Skip the heavy cream or replace with oat cream or coconut milk for a silky texture.
  • Make it gluten-free: Swap lasagna noodles for your favorite gluten-free pasta. Keep an eye on the cooking time, as gluten-free pasta softens faster.
  • Add vegetables: Stir in chopped spinach, zucchini, or mushrooms during the last few minutes of cooking for extra fiber and volume.

Storage & Meal Prep

Let the soup cool completely before storing. Keep the soup and ricotta topping separate in airtight containers in the fridge for up to 4 days.

If you plan to meal prep, store the noodles separately or slightly undercook them to prevent them from becoming soggy.

This soup isn’t ideal for freezing, as the dairy and pasta will change texture.

FAQ

Can I freeze lasagna soup?

It’s best enjoyed fresh. The noodles and dairy don’t hold their texture well once frozen. If you’d like to freeze it, store the soup base without noodles or ricotta topping for up to 3 months, then add those fresh when reheating.

How can I make it spicier?

Totally! Add extra red pepper flakes when sautéing the onion and garlic, or stir in a spoonful of Calabrian chili paste just before serving for a gentle kick.

Can I use a different protein?

Absolutely. Ground turkey, chicken, or even Italian sausage all work beautifully. If using sausage, you can skip the added salt and adjust to taste at the end.

Instructions

  1. Brown the meat
Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add 1 pound lean ground beef and spread it out into an even layer and resist stirring for the first 2 to 3 minutes to let it develop a deep brown crust.
Once the bottom is golden and caramelized, break the meat apart and continue cooking for another 3 to 4 minutes until browned all over.
This step builds complex, savory flavor that mimics a slow-simmered sauce.

  2. Build flavor
Stir in 1 diced onion and 5 cloves minced garlic. Sauté for 2 to 3 minutes until fragrant then stir in ½ teaspoon red pepper flakes. Add 4 tablespoons tomato paste and cook for another 2 minutes, stirring often, until it darkens and caramelizes.
Optionally, deglaze the pot with a splash of red wine, scraping up any browned bits from the bottom.

  3. Simmer
Add 1 teaspoon Italian seasoning, 2 cans crushed tomatoes, 4 cups beef broth or bone broth, and 1 teaspoon balsamic vinegar. Stir well and cook uncovered over medium-high heat for about 10 minutes, stirring occasionally, to let the flavors meld and the sauce thicken slightly.
The balsamic adds umami and sweetness that balances out the acidity for that slow-simmered taste in less time.
