Layered matcha chia pudding in a glass topped with matcha powder and fresh raspberries

Trust me when I say you’re going to love this high-protein matcha chia pudding. Not only is it super simple to make, it’s kind of a triple threat in the breakfast department: it’s high-protein, high-fiber, and has a little caffeine boost built in from the matcha.

Most matcha chia pudding recipes you see online rely on plant-based milk alone. This matcha chia pudding with greek yogurt has two protein sources instead: optional protein powder plus the greek yogurt itself, which also makes the pudding extra creamy.

It all comes together in about 5 minutes, then you let it sit overnight and portion into individual containers. I layered mine with some coconut yogurt, a dusting of matcha powder, and fresh raspberries on top.

It really is the perfect easy breakfast for busy weeks when you want something delicious waiting for you in the fridge without a ton of effort.

Ingredients You’ll Need

  • Greek yogurt – Creates a thick, creamy base while adding a major protein boost.
  • Unsweetened plant-based milk – Lightens the pudding’s texture and gives the chia seeds the hydration they need to plump up.
  • Chia seeds – Provide the classic pudding texture plus fiber and healthy fats to keep you satisfied allll morning long.
  • Vanilla whey protein powder – Adds sweetness and over 12 grams of protein without extra sugar. Simply Tera’s is my favorite.
  • Matcha powder – Whether you use culinary-grade or ceremonial-grade matcha, it brings earthy green tea flavor and a gentle caffeine boost.
  • Vanilla extract (optional) – Rounds out the flavor and softens the matcha’s earthiness.
  • Your favorite toppings – From fresh berries and coconut yogurt to flax seeds or your favorite nut butter, the options are limitless.

Ideas

Victoria’s Tips

A couple simple tips to ensure you get the best possible results.

  • Use good-quality matcha – Premium or culinary‑grade matcha gives the best color and flavor without bitterness.
  • Adjust sweetness to taste – Matcha can be earthy and slightly bitter. If you prefer a sweeter result, gradually add sweetener of choice and taste as you go.
  • Mix thoroughly – Whisk well before chilling so chia seeds distribute evenly and don’t clump.
  • Customize the protein – Whey gives the smoothest texture, but plant-based protein can work too (just add a splash more milk if it’s thick).

Swaps & Substitutions

  • Greek yogurt: For dairy-free, coconut yogurt is great but any plant-based yogurt will work.
  • Plant-based milk: Any milk works here. Oat, almond, coconut, and dairy all go well with chia and matcha.
  • Whey protein powder: Swap for plant-based or collagen protein. Plant-based tends to soak up more liquid, so add a splash more milk if the texture feels too dense.
  • Sweetener: Maple syrup and honey are my go-tos. Start with 1 teaspoon per serving and taste as you go.
  • Toppings: Anything goes. Fresh fruit, granola, nut butter, coconut flakes, cacao nibs. Pick whatever you’re craving that morning.

Storage & Meal Prep

This matcha chia pudding keeps for up to 4 days in the fridge in an airtight container. The texture actually gets better the longer it sits, so you can prep it a couple days in advance and enjoy throughout the week.

FAQ

What kind of matcha should I use?

Culinary-grade matcha is great for this and more budget-friendly than ceremonial. But if you want an extra bright, vibrant green color, go for ceremonial. This is my favorite price/quality option you can get on Amazon.

Does this have a lot of caffeine?

One teaspoon of matcha has about 60 to 70mg of caffeine, which is what you get per serving here. That’s less than a cup of coffee, but the L-theanine in matcha makes the energy feel more steady and calm.

Can I make this without protein powder?

Totally! You’ll still land around 24 grams of protein per serving from the yogurt and chia seeds. Plant-based protein powder works too, just add a splash more milk since it soaks up liquid a little differently than whey.

How long does it last in the fridge?

Stored in an airtight container, it keeps for up to 4 days. The texture actually improves the longer it sits, so this one is perfect for Sunday meal prep. Give it a quick stir before serving and add your toppings fresh.
