How to Make This Miso Salmon Sheet Pan

This recipe looks elegant but comes together effortlessly with a few simple steps. Here’s how to bring it all together for a nourishing, flavor-packed dinner.

Silky maple miso marinade simmering in a saucepan with a whisk on a white background

Start by making the miso marinade. Gently simmer white miso paste, maple syrup, rice vinegar, water, sesame oil, grated ginger, and garlic in a small saucepan until smooth and slightly thickened. Let it cool to room temperature before using.

Raw salmon filets marinating in maple miso sauce in a shallow white bowl

Coat the salmon filets with a few spoonfuls of the marinade and let them rest in the fridge for at least 30 minutes to soak up all that umami-rich flavor. You’ll have enough marinade to prep a few extra filets for the next day, which I highly recommend.

Thin slices of kabocha squash tossed in miso marinade, arranged on a parchment-lined sheet pan

Slice the kabocha squash into thin wedges and toss with some of the marinade and a bit of oil. Roast the squash on a parchment-lined sheet pan until tender and starting to caramelize around the edges.

Add the marinated salmon and lightly oiled broccolini to the pan. Return everything to the oven and roast until the salmon is just cooked through and the broccolini is tender-crisp.

Serving Suggestions

This miso salmon sheet pan is delicious on its own, but it also pairs beautifully with a bowl of steamed jasmine rice, quinoa, or soba noodles to soak up the miso butter sauce.

For something lighter, serve it over a bed of baby greens or alongside a simple cucumber salad with rice vinegar and sesame oil.

Leftovers make an easy next-day lunch. Try flaking the salmon over a grain bowl or turning it into a miso-glazed salmon rice bowl with pickled veggies and a jammy egg.

Storage & Meal Prep

This recipe is perfect for prepping ahead. The miso marinade can be made up to 5 days in advance and stored in the fridge. You can also marinate the salmon the night before for even deeper flavor.

Once cooked, the salmon, squash, and broccolini will keep well in an airtight container in the fridge for up to 3 days.

For best results, reheat gently in a skillet or oven to preserve the texture. The miso butter sauce can be stored separately and reheated just before serving.

FAQ

Can I make this with another type of fish?

Yes! This marinade also works beautifully with cod, trout, or even halibut. Just be mindful of cooking times, as thinner fillets may cook faster than salmon.

What if I can’t find kabocha squash?

No problem at all. You can substitute with delicata, acorn, or even sweet potato. Just slice them thin so they roast at the same rate as the salmon.

Is the miso marinade gluten-free?

It can be! Just use gluten-free white miso. Always check labels to be sure.

How can I tell when the salmon is perfectly cooked?

The salmon should flake easily with a fork and be just opaque in the center. It usually takes about 12 to 14 minutes at 425°F, depending on thickness.

Can I double the recipe?

Yes, especially if you’re meal prepping. Just use two sheet pans or roast in batches to avoid crowding, which can lead to steaming instead of roasting.

I only had bok choy to make with the salmon, but it came out so delicious. Placed on brown rice with a tossed salad on the side. Perfect dinner for two.
