Raw ingredients for sheet pan baked feta arranged on parchment—broccolini, cherry tomatoes, red onion, chickpeas, feta, and lemon halves

Ingredients You’ll Need

  • Feta — Creamy and tangy, feta becomes beautifully soft and golden in the oven.
  • Chickpeas — Hearty and fiber-rich, chickpeas add plant-based protein and a satisfying bite. Roasting them gives a nutty, slightly crisp edge.
  • Broccolini — This tender, slightly sweet cousin of broccoli roasts quickly and adds gorgeous color and texture.
  • Cherry tomatoes — These burst and caramelize in the oven, adding juicy sweetness that balances the salty feta and earthy chickpeas.
  • Red onion — When roasted, red onions become jammy and sweet, adding a savory depth to the mix.
  • Garlic + lemon — Roasted garlic mellows into a buttery spread, while lemon brings bright acidity. Roasting the lemon halves adds a subtle sweetness and makes them easier to juice.
  • Olive oil + spices — A simple blend of olive oil, smoked paprika, cumin, and salt ties everything together with warmth and richness. A sprinkle of chili flakes adds optional heat.
  • Fresh oregano — Chopped oregano adds a pop of freshness and imparts the classic flavors of the Mediterranean.

Golden baked feta with chickpeas, tomatoes, red onion, and charred broccolini on a parchment-lined sheet pan

How to Make It

  1. Prep your sheet pan.
Start by preheating your oven to 400°F (200°C) and lining a large sheet pan with parchment paper for easy cleanup.
  2. Toss the veggies and chickpeas.
Add the chickpeas, broccolini, cherry tomatoes, and red onion to the sheet pan. Drizzle with olive oil and sprinkle with smoked paprika, cumin, and salt. Toss everything directly on the pan until evenly coated, then spread it out in a single layer.
  3. Add garlic and lemon.
Nestle in the halved garlic head and lemon halves, cut side down. These will roast alongside everything else and add tons of flavor.
  4. Top with feta.
Place the blocks of feta on top of the veggie mixture. Drizzle a little more olive oil over the cheese, then season with chili flakes and fresh oregano.
  5. Roast until golden.
Transfer the sheet pan to the oven and bake for 25 to 30 minutes, or until the tomatoes are blistered, the broccolini is lightly charred, and the feta is golden around the edges.
  6. Finish and serve.
Squeeze the roasted lemon and garlic over the pan and sprinkle with more fresh oregano. Serve warm with pita, couscous, or on its own.

FAQ

Can I use crumbled feta instead of a block?

It’s best to use block-style feta for this recipe, as it holds its shape while roasting and turns golden on the outside while staying creamy inside. Crumbled feta may melt too quickly or dry out.

Can I swap the feta for halloumi?

Yes, halloumi is a great alternative. It holds up well to roasting and develops a delicious, crispy exterior. Just note that it’s firmer and saltier than feta, and it won’t get as creamy.

Can I add other vegetables like red bell pepper?

Totally! This recipe is very flexible. Red bell pepper, zucchini, eggplant, or asparagus all roast well and can be added or swapped in based on what you have.

What are the best things to serve it with?

This dish pairs beautifully with warm pita bread, couscous, quinoa, or farro. You can also serve it over a bed of greens or drizzle with tahini for extra flavor.

Is this good for meal prep?

Yes! It stores well for up to 3 days in the fridge and reheats nicely. It also tastes great at room temperature over grains or in a nourish bowl.
