How We Recreated the Starbucks Egg White Bites

To get these as close as possible to the Starbucks version, we studied their nutrition label and ingredient list. The bites are high in protein, low in carbs, and use cottage cheese, Monterey Jack, and rice starch for that signature fluffy texture.

Our copycat recipe blends egg whites with cottage cheese and a touch of cornstarch for creaminess, then bakes them in a water bath to mimic sous vide so that no special equipment is required. With roasted red peppers and spinach for flavor, they taste nearly identical and are perfect for meal prep.

Ingredients You’ll Need

  • Egg whites – The base of this recipe, keeping the bites high in protein and low in fat. You can use carton egg whites or separate whole eggs.
  • Cottage cheese – Blended into the eggs for a creamy, custard-like texture without adding heaviness.
  • Monterey Jack cheese – Melts smoothly into the base, adding mild richness that mimics the Starbucks flavor. Mozzarella cheese also works well.
  • Feta cheese – Adds a tangy, salty note to balance the sweetness of the peppers.
  • Roasted red bell peppers – Sweet, smoky, and colorful; they’re a key flavor in the Starbucks version.
  • Fresh spinach – A nutrient-packed green that adds color and freshness to every bite.
  • Green onions – For a mild oniony bite that brightens the overall flavor.
  • Cornstarch – Helps stabilize the mixture and replicate the fluffy sous-vide texture.
  • Hot sauce (optional) – Adds a subtle kick and enhances the savory flavors.

How to Make Starbucks Egg White Bites in the Oven

  1. Blend the base
Combine egg whites, cottage cheese, Monterey Jack, and cornstarch in a blender. Blending is key for that ultra-smooth, fluffy texture that mimics sous vide.
  2. Prep the muffin tin
Lightly grease a 12-cup muffin tin with cooking spray or use silicone liners for easy release.
  3. Pour, then add mix-ins
Divide the blended mixture into the muffin cups, then scatter roasted red peppers, spinach, feta, and green onions over each cup. This keeps the colors vibrant and prevents watery veggies from sinking to the bottom.
  4. Set up a water bath
Place the muffin tin inside a larger roasting pan or baking sheet and pour hot water around it. This gentle cooking method prevents the eggs from overcooking and creates that custardy bite.
  5. Bake low and slow
Set on the middle rack of the oven and cook at 300°F (150°C) until the bites are just set and slightly puffed but not browned. Overbaking can make them rubbery.
  6. Cool briefly before removing
Let them sit in the pan for a few minutes; they’ll firm up as they cool, making them easier to remove.

Storage & Reheating Tips

  • Refrigerate: Store cooled egg bites in an airtight container for up to 4 days.
  • Freeze: Wrap leftover egg bites individually in plastic wrap or foil, place in a freezer-safe bag, and freeze for up to 2 months.
  • Reheat from fridge: Microwave 30 to 45 seconds until warmed through.
  • Reheat from frozen: Microwave 1 to 2 minutes, or thaw overnight in the fridge and warm for 30 to 45 seconds.

Pro tip: To achieve the right texture, avoid overcooking during the initial bake. This ensures they stay creamy when reheated.

Final Thoughts

This copycat Starbucks egg bites recipe proves you don’t need the traditional sous vide method or any fancy equipment to get that signature custardy texture. Baking low and slow in a steam bath delivers the best results and turns out bites that are just as creamy as the original.

They’re one of my favorite easy breakfasts to meal prep, and a big batch keeps in the fridge or freezer, so you always have a high-protein breakfast option ready to go.
