Start Cooking

Instructions

  1. Whisk the dressing. In a small jar, combine ⅓ cup rice vinegar, ⅓ cup low-sodium soy sauce, ⅓ cup toasted sesame oil, 3 tbsp honey, 2 tbsp freshly grated ginger, 3 cloves garlic, and 2 tsp chili crisp (if using). Screw on the lid and shake until everything is emulsified.
  2. Build the salad. In a large bowl, combine 2 can butter beans (drained and rinsed), 2 cups shelled edamame, 2 cups roughly chopped red cabbage, 2 cups roughly chopped napa cabbage, 3 cups shredded rotisserie chicken breast, 6 thinly sliced green onions, ½ cup chopped fresh cilantro, 3 fresh mandarins (segmented and cut in half), ½ cup roughly chopped roasted almonds, and 3 tbsp toasted sesame seeds. Pour the dressing over the top and toss until everything is coated.
  3. Top and serve. Transfer to a serving bowl or 6 meal-prep containers. Finish with extra chopped roasted almonds and extra thinly sliced scallions.

Notes

  • Toppings: Store the almonds and sesame seeds in a small separate container or ziplock bag and add them just before eating. This will keep them fully crunchy.
  • Swaps: Butter beans can be swapped for cannellini or chickpeas. Cashews or peanuts can be used instead of almonds. Fresh mandarins can be swapped for one can of mandarin segments in juice, drained really well.
