Cottage Cheese Bowl with Macerated Strawberries

5 from 1 vote
Creamy cottage cheese topped with sweet macerated strawberries and thinly sliced fresh mint. It's a simple breakfast that feels fancy but is secretly healthy and high-protein.

Instructions

  1. Macerate the strawberries
In a bowl, combine 2 cups strawberries (halved) with 1 tbsp honey, ¼ tsp vanilla bean powder (or a splash of vanilla extract), and a small pinch of salt.
Stir gently, cover, and refrigerate overnight (about 8 hours), stirring once partway through, until the strawberries are glossy and have released a syrupy juice.
  2. Build the bowl
Divide 2 cups cottage cheese between two bowls. Spoon the macerated strawberries over the top, along with a little of their juice. Top with thinly sliced fresh mint leaves over the bowls and serve.

Notes

  • Vanilla bean powder adds pretty flecks and deep flavor, but vanilla extract works just as well.
  • Overnight maceration draws out the most syrup, but even 30 minutes at room temperature will release some juice if you are short on time.
  • Meal prep: macerate a batch of strawberries at the start of the week. They keep in an airtight container in the fridge for up to 4 days, so each morning you just spoon cottage cheese into a bowl, top with the strawberries and a little of their juice, and finish with fresh mint.
