Instructions

  1. In a small saucepan, combine ½ cup rolled oats, 1 cup dairy-free milk, and 1 scoop vegan or collagen protein powder. Cook over medium heat, stirring frequently, until the oats are soft and the mixture thickens, about 5 to 7 minutes.
For This Spiced Pear Variety (optional)
  1. Stir in ½ teaspoon vanilla extract, 1 to 2 teaspoons maple syrup, and a pinch of cardamom or nutmeg, adjusting the sweetness and spice to your liking. Add a splash more milk if you prefer a creamier texture.
  2. While the oats cook, warm ½ sliced pear in a small skillet with a pinch of cardamom and coconut sugar until just tender, about 2 to 3 minutes.
  3. Spoon the oatmeal into a bowl and top with the warm pear, 1 tablespoon coconut yogurt, 1 tablespoon pistachio butter, a drizzle of 1 teaspoon maple syrup, and 1 tablespoon chopped pecans. Serve warm.
