Fluffy Pumpkin Protein Pancakes (Made with Cottage Cheese)

5 from 1 vote
These pumpkin protein pancakes are soft, fluffy, and full of cozy fall flavor. The cottage cheese makes them creamy on the inside with golden, lightly crisped edges, while oat flour adds a subtle nuttiness that pairs beautifully with the pumpkin pie spice.
