Instructions

  1. In a bowl or ziplock bag, combine 1 lb boneless skinless chicken breast with 1 tbsp olive oil, 1 lemon (zest & juice), 1 tsp dried oregano, 1 tsp garlic powder, and ½ tsp salt. Let it sit while you prep everything else, at least 5 minutes.
You can also marinate it in the fridge for up to 8 hours if you want to get ahead.

  2. Preheat the air fryer to 400°F. Place the chicken in a single layer in the basket. Air fry for 10 to 12 minutes, flipping halfway through, until the internal temperature reaches 165°F.
Let the chicken rest for 5 minutes, then slice.

  3. Grate ⅓ english cucumber on a box grater, then squeeze out as much liquid as you can using a clean towel or your hands over the sink.
Stir together the grated cucumber, ½ cup plain greek yogurt, 1 small clove garlic (grated), 3 tbsp fresh dill, and a pinch of salt. Taste and adjust salt if needed.

Notes

  • Storebought tzatziki works here if you want to skip a step. Trader Joe's and Whole Foods both make great versions.
  • Chicken thighs will also work. Air fry at 400°F for 15 minutes. They take slightly longer but stay juicy.
  • Meal prep: The chicken and salad store well separately for up to 4 days in the fridge. Keep the tzatziki in its own container. Assemble when you're ready to eat.
  • Oven option: If you don't have an air fryer, bake the chicken at 425°F for 18 to 20 minutes.
  • Pita: Warm it in the air fryer for 2 to 3 minutes at 350°F while the chicken rests.
