Notes

Herbs: Use whatever fresh herbs you have on hand. A mix of parsley, cilantro, basil, dill, and tarragon gives the most layered flavor, but all-parsley or all-cilantro works too. The dressing is forgiving; just keep the total volume around 1 packed cup.
Lighter version: Skip the mayo and use all Greek yogurt for a lighter dressing with even more protein.
Dairy-free version: Skip the yogurt and use all mayo. The texture will be richer and the tanginess will come entirely from the lime.
Texture tip: The extra mixing time after adding the dressing is what creates that signature whipped, almost mousse-like texture. Don't skip it.
