Ingredients
Instructions
- Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium heat. Add 2 pounds cubed chicken thighs and cook until lightly browned, 5 to 7 minutes. Remove and set aside.

- Add 2 pounds chicken sausage (casings removed) to the pot and cook until browned, breaking it into small pieces, about 5 to 7 minutes. Return chicken thighs to the pot.

- Add 1 chopped onion, and 3 diced jalapeños. Cook for 5 minutes until softened. Stir in 5 minced garlic cloves and 1 chipotle pepper in adobo (more if desired), cooking for 1 minute.

- Stir in 1 can crushed tomatoes and 3 tablespoons tomato paste. Cook for 2 to 3 minutes, then pour in 2 cups chicken bone broth or stock, scraping the bottom of the pot to incorperate all the pieces of browned meat stuck to the base.

- Add 2 bay leaves, 2 tablesoons chili powder, 2 tablespoons smoked paprika, 2 tablespoons cocoa powder, 1 tablespoon cumin, 1 tablespoon oregano, 2 teaspoons chipotle chili powder, 1 teaspoon ground coriander, ½ teaspoon cinnamon, and ½ tablesoon kosher salt. Stir well to combine.

- Reduce heat to low and simmer uncovered for at least 1 hour or up to 3 (the longer the better), stirring occasionally to prevent sticking. Add small amounts of additional water or stock if needed.

- Remove bay leaves, taste, and adjust seasoning. Serve hot with toppings of choice. (I like a dollop of greek yogurt, diced avocado, thinly sliced jalapeño, freshly squeezed lime juice, and fresh cilantro.)

Notes
- Spice level: For a milder chili, reduce or omit the chipotle pepper and jalapeños. For extra heat, add more chipotles in adobo or chipotle chili powder.
- Cooking methods: This chili can also be made in the Crockpot or Instant Pot. See "Other Cooking Methods" for more details.
- Freezing: Freezes well for up to 3 months. Thaw overnight in the fridge before reheating.
