Ingredients

  • 2 cups liquid egg whites, about 10 egg whites
  • 6 slices turkey bacon
  • ½ cup cottage cheese
  • ½ cup shredded cheddar cheese
  • 1 cup frozen shredded hash browns
  • 1 cup baby spinach, roughly chopped
  • ½ tsp garlic powder

Start Cooking

Instructions

  1. Preheat oven
Preheat to 375°F (190°C). Line an 8x8-inch baking dish (or similar) with parchment paper and lightly grease with cooking spray or olive oil.
  2. Cook the turkey bacon
Place 6 slices of turkey bacon in a large skillet over medium heat. Cook for 6–8 minutes, flipping occasionally, until browned and crisp. Transfer to a paper towel–lined plate, then chop into small pieces.
  3. Mix the base
In a large mixing bowl, whisk together 2 cups liquid egg whites (or 10 egg whites), ½ cup cottage cheese, ½ cup shredded cheddar cheese, ½ teaspoon garlic powder, and ½ teaspoon salt.

  4. Add spinach, hash browns & bacon
Stir in 1 cup chopped baby spinach, 1 cup frozen shredded hash browns, and the chopped turkey bacon until evenly combined.

  5. Bake
Pour the mixture into the prepared dish, pushing the mix-ins below the surface of the egg white mixture. Bake for 30 to 35 minutes, or until the center is set and a knife inserted in the middle comes out clean.
