Ingredients

  • 1 tbsp olive oil
  • 1 medium white potato, peeled and grated
  • 1 medium sweet onion, grated
  • 12 large eggs
  • ¾ cup milk, dairy or unsweetened plant-based
  • 1½ cups diced ham
  • 1½ cups shredded sharp cheddar cheese, I like to use a mix of classic cheddar and white cheddar.
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
Start Cooking

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Grate 1 medium white potato and 1 medium sweet onion. Heat 1 tbsp olive oil in a large skillet over medium heat and add both. Cook for 6 to 8 minutes, stirring occasionally, until softened and lightly golden. Remove from heat and let cool slightly.

  6. Bake for 35 to 45 minutes, until the center is set and the top is golden. A knife inserted into the center should come out mostly clean.
If you use a smaller but deeper baking pan like mine, you may need to add a bit of extra time.

Notes

  • Cheese swaps: Colby-Jack or mozzarella both work well.
  • Make it richer: Use whole milk or add an extra ¼ cup cheese on top before baking.
  • Meal prep: Stores well and reheats without drying out.
