Start Cooking

Instructions

  1. Prepare the salmon
If your 2 salmon fillets have skin on, slide a sharp knife between the skin and flesh, starting at one end and gently working it off (or ask your fishmonger to do this for you). Pat the salmon dry.
Pour 2 tbsp soy sauce or tamari over the salmon fillets and lightly coat all over. Add 2 tbsp black sesame seeds and 2 tbsp white sesame seeds to a shallow bowl and add the salmon, pressing gently so the seeds adhere evenly to all sides.

  2. Make the soy-sesame sauce
In a small bowl, whisk together 2 tbsp soy sauce or tamari, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp toasted sesame oil, and 1 tsp chili oil (if using). Set aside.

  3. Prepare the bok choy
Rinse the 2 heads baby bok choy well and pat dry. Slice in half lengthwise and toss with 1 to 2 tablespoons of the prepared soy-sesame sauce, just enough to lightly coat without pooling.

  4. Cook the salmon and bok choy
Air Fryer Method: Preheat the air fryer to 400°F (205°C). Place the salmon fillets in the basket and arrange the bok choy alongside, cut-side down. Air fry for 12 to 14 minutes, until the salmon is cooked through and the sesame crust is golden and crisp.
Oven Method: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Add the salmon the bok choy then roast for 14 to 16 minutes, until the salmon flakes easily and the sesame seeds are lightly toasted. Broil for 1 to 2 minutes at the end if desired.

  5. Assemble the bowls
Divide the 1 cup cooked rice between two bowls. Add 1 cup shelled edamame, the sesame-crusted salmon, and soy-glazed bok choy. Drizzle with remaining sauce and finish with 1 green onion, thinly sliced.
