Instructions

  1. In a bowl or jar, add ½ cup rolled oats, 1 tablespoon chia seeds, ¼ cup pumpkin puree, ¼ cup Greek yogurt, 1 scoop vanilla protein powder, ½ cup milk, and 1 teaspoon pumpkin pie spice.
A mixing bowl filled with ingredients for pumpkin overnight oats, including chia seeds, pumpkin puree, protein powder, Greek yogurt, cinnamon, and milk, before being stirred together.
  2. Stir everything together until smooth and well combined, making sure the chia seeds are evenly distributed. Add 1 to 2 teaspoons maple syrup or honey if you prefer more sweetness and a tiny pinch of salt.

  3. Add to jar and cover. Refrigerate for at least 4 hours, or ideally overnight, until the oats and chia have absorbed the liquid and the mixture is thick and creamy.
