Instructions
- Preheat oven to 300°F (150°C) and bring a kettle of water to a boil.
- Heat a skillet over medium-high heat and cook 4 oz lardons for about 5 minutes until crispy and rendered. Drain on a paper towel-lined plate and set aside.
- Add 8 eggs, 1 cup cottage cheese, 1 cup gruyere cheese (shredded), 1 tbsp cornstarch, ¼ tsp salt, ½ tsp onion powder, ½ tsp garlic powder and ¼ tsp nutmeg to a blender. Blend on high until creamy and well combined. Add the eggs and blend just until combined and smooth.
- Place the silicone muffin tray on top of a 9x13 baking sheet. Lightly spray the cups with cooking spray. Divide the lardons evenly among the 12 cups, then pour the egg mixture over top.
- Transfer the baking sheet with the filled muffin tray to the oven. Carefully pour the boiling water into the baking sheet to create a water bath that submerges the bottom of the muffin cups.
- Bake for 30 minutes, until just set with a slight jiggle in the center. Remove the muffin tray first, then carefully remove the baking sheet with the water. Let cool for a few minutes before popping the egg bites out.

Notes
- Lardons can easily be swapped out for diced bacon, pancetta, or diced ham.
- The water bath is essential if you want to achieve a silky texture but if you're okay with a more souffle-like egg bite, you can skip it.
