1. Roasted Broccoli and Cheddar Soup
I don’t know what it is but broccoli cheddar soup just hits different. I’m tempted to say it’s a combination just as good as peanut butter and jelly. This fall soup recipe is the perfect combination of easy-to-make, packed with flavor, and veggie-filled. I like to use high-quality raw cheddar for the additional healthy benefits and strong almost spicy flavor.
2. Cashew Carrot Ginger Soup
This cashew carrot ginger soup is everything I love about fall soups. It’s creamy and spicy and has the perfect crunchy topping. I particularly love the addition of the red curry paste and coconut milk, they take the recipe to another level of umami and add an incredible depth of flavor.
3. Greek Lemon Chicken Soup
Picking a favorite seems nearly impossible but this might just be my favorite fall soup recipe of all time. Avgolemono is a traditional Greek soup that’s made with chicken, orzo, and lots of lemon. Instead of being thickened by cream, this soup uses egg yolks to achieve the creamy, rich texture.
4. Sweet Potato Chowder
Sweet Potato Chowder is Fall-in-a-bowl. It has all the colors of the season and takes advantage of fall produce like sweet potatoes, kale, and pumpkin seeds. It’s super comforting and hearty and packed with several servings of vegetables. It’s a whole-ass Fall vibe.
