Instructions
- Preheat oven to 300°F (150°C). Spray a 12-cup silicone muffin tin with nonstick spray. While this recipe will also work in a metal muffin pan, you will have a hard time getting the egg bites out in one piece.
- Blend the baseIn a blender, combine 2 cups egg whites, ½ cup cottage cheese, ¼ cup shredded Monterey Jack cheese, 1 teaspoon cornstarch, 1 teaspoon hot sauce, and ½ teaspoon salt. Blend until completely smooth and frothy.

- Pour into muffin tinDivide the blended mixture evenly into the prepared muffin cups, filling each about ¾ full.

- Add mix-insEvenly distribute ¼ cup roasted red peppers, ¼ cup chopped spinach, 2 tablespoons feta, and 1 sliced green onion across all cups, lightly stirring or pushing them under the surface with a spoon.

- Prepare water bathPlace the muffin tin inside a larger roasting pan or baking dish. Pour hot water into the outer dish until it reaches halfway up the sides of the muffin tin.

- BakeTransfer to the oven and bake 30 to 35 minutes, until bites are just set and slightly puffed but not browned.
- Cool & serveLet cool in the pan for 5 minutes; they will firm up as they cool. Remove and enjoy warm, or store for later.
