Savory cottage cheese breakfast bowl with soft-boiled eggs, avocado, sweet potato, and everything bagel seasoning

I have a confession to make. I LOVE cottage cheese, and I don’t mean in the way that it’s trending and I’m suddenly obsessed with it.

I’ve loved it ever since I was a child and first got hooked on those single-serving cottage cheese pineapple flip cups. And I’ve stayed loyal since then, even through the times when everyone around me thought it was disgusting. So what a relief that it’s trending right now.

Cottage cheese has been a staple in my breakfast rotation for ages, so I’ve found quite a few ways to keep it interesting. These savory cottage cheese breakfast bowls are one of my favorites.

It all starts with a creamy scoop of cottage cheese (the breakfast superstar). Then you pile on some golden seasoned sweet potato cubes, eggs (jammy or soft-scrambled), and half a ripe avocado.

The toppings are where it really comes together. I like a generous sprinkle of everything but the bagel seasoning, plus some red pepper flakes, a light drizzle of good olive oil, and a bit of microgreens if you have them.

Comes together in 20 minutes, packs over 30 grams of protein per serving, and is the savory breakfast bowl that might become your next high-protein breakfast fixation.

Why You’ll Love It

  • 30 grams of protein per serving. Between the cottage cheese and eggs, you’re starting your day with at least 30 grams of protein, which is pretty much guaranteed to keep you full until lunch.
  • Savory in all the best ways. An alternative to a sweet breakfast bowl or overnight oats, this breakfast is about all the delicious savory flavors.
  • Ready in 20 minutes. Quick enough for a weekday morning, especially if you batch cook the sweet potatoes and eggs ahead of time.
  • Totally customizable. Pan, oven, or air fryer for the sweet potatoes. Soft scramble your eggs or boil them until jammy. This bowl can be customized to your mood and your preferences.
  • Real-food ingredients. Nothing weird, no protein powders. Just cottage cheese, eggs, sweet potato, avocado, and a couple good seasonings.

Key Ingredients

The savory cottage cheese breakfast bowl comes together with just a couple real ingredients that are packed with nutrients and flavor.

  • Cottage cheese. Not only does this become the creamy base of your dish, it’s also packed with protein. You can use full-fat, reduced-fat, or non-fat, but believe me, a high-quality cottage cheese does make a difference.
  • Eggs. Two large eggs, cooked your way, either soft-scrambled or soft-boiled for that jammy yolk you can break over the cottage cheese.
  • Sweet potato. I like them diced small and seasoned thoroughly, then I throw them in the air fryer until crispy, but there are tons of ways to make them. It’s your call.
  • Avocado. Half a ripe avocado adds richness, healthy fats, and a delicious buttery texture that ties the warm and cold elements together.
  • Toppings. This is totally up to you, but I like to add everything but the bagel seasoning with a bit of red pepper flakes, a little drizzle of olive oil, and a sprinkling of microgreens. Aim for salty, spicy, and fresh, and you’ll get a really great balance.

How To Make It

This savory cottage cheese breakfast bowl recipe could not be simpler to make and I’ve included different cooking methods to match your style.

  1. Season and cook your sweet potatoes. Dice your peeled sweet potato, then toss with olive oil and your favorite seasonings and salt. Pick your cook method: pan-fried in a skillet, air-fried, or roasted in the oven.
  2. Cook your eggs. Either soft scramble or soft boil.
    • To soft-scramble, heat a pan over medium-low. Add a little bit of butter, then pour in your eggs, moving them constantly until you get that perfect soft-scrambled texture.
    • For soft-boiled, boil them for 7 minutes, then throw them into a quick ice bath. If you’re air-frying your sweet potatoes, you can also throw the eggs in the air fryer for 9 to 10 minutes.
  3. Build your bowl. Spoon the cottage cheese into a wide shallow bowl, then arrange your sweet potatoes, eggs, and sliced avocado around it. Top with everything but the bagel seasoning, a pinch of red pepper flakes, and a light drizzle of olive oil, then throw on some microgreens for a bit of color.

Victoria’s Tips

These small tips make the biggest difference when it comes to building the perfect savory cottage cheese breakfast bowl.

  • Don’t overcrowd your pan or air fryer basket. If you want golden, crispy sweet potato cubes, they need space to brown evenly, so no matter your cooking method, make sure you don’t overcrowd.
  • Season generously. Because we’re working with simple, real-food ingredients, each component needs to be seasoned thoroughly. Use your favorite spices on the sweet potatoes, a little flaky salt on the eggs and avocado, and a drizzle of olive oil and everything but the bagel seasoning on the cottage cheese.
  • Use high-quality cottage cheese. I’m the queen of taste tests because I need to know if it’s worth my money to buy the more expensive version. What I found is that when it comes to cottage cheese, there’s a huge difference in quality. High-quality cottage cheese is creamier, less liquidy, and has a better overall texture.

Swaps & Substitutions

Need to swap something? Here’s what works:

  • Cottage cheese: Whipped ricotta, whipped feta, or even thick plain greek yogurt all work here. Each one changes the flavor, so pick based on what else is in your bowl. Ricotta is milder, feta is saltier, and greek yogurt is tangier.
  • Eggs: Cook any style, or swap for a tofu scramble if you prefer to keep this fully vegetarian or egg-free. You can also toss in some smoked salmon or a bit of turkey bacon if you want to skip cooking the eggs entirely.
  • Sweet potato: I like mine cubed, golden, and crispy, but you can also do a whole roasted sweet potato, diced butternut squash, or even yukon gold potato hash. Totally up to you what you want to throw in as your source of carbs.
  • Avocado: Leave it out, substitute with a scoop of guacamole, or swap for another green or healthy fat.
  • Microgreens: Finely chopped baby arugula, sliced scallions, or a small handful of fresh herbs like parsley, cilantro, or dill all work great here and give that little bit of a fresh finish.
  • Everything but the bagel seasoning: While this really is my favorite, there are lots of great options here: za’atar is lemony and herby, dukkah is nutty and crunchy, furikake gives more of an Asian spin with lots of umami.
  • Olive oil drizzle: Wanna spice things up? Swap it for a bit of chili crisp to add heat and crunch. Hot honey also adds a sweet-savory note that’s great.

Storage & Meal Prep

This bowl is best prepared fresh, but you can prep a couple of the components if you want to make things faster throughout the week. Cooked sweet potatoes keep in an airtight container in the fridge for 4 days, and soft-boiled eggs keep for 3 days unpeeled.

With those two components prepped, it’s really just a 2-minute assembly: scoop the cottage cheese, warm up the sweet potato, peel and halve the egg, then throw on the avocado and toppings.

FAQ

What kind of cottage cheese is best?

I prefer a high-quality, full-fat cottage cheese (Good Culture is my favorite). You can also use low-fat or non-fat depending on your preference. Or swap for a thick greek yogurt, whipped ricotta, or even whipped feta if you prefer.

Can I make this dairy-free?

Yup, you can swap the cottage cheese for a thick coconut yogurt or dairy-free ricotta and use olive oil instead of butter for the eggs. You’ll lose some protein, so consider adding a third egg or maybe even some smoked salmon or turkey bacon.

Is this savory cottage cheese breakfast bowl gluten-free?

All the ingredients on their own are totally gluten-free; just double-check your seasonings.

How can I meal prep this breakfast?

Cook a big batch of sweet potatoes and soft-boil a few eggs; then all you have to do the morning of is assemble. It takes about 2 minutes to scoop the cottage cheese, warm up the sweet potatoes, peel and halve your eggs, then add your avocado and toppings.

Instructions

Cook Your Sweet Potato
  1. Season the sweet potato. In a small bowl, toss ½ cup peeled and diced sweet potato with 1 tsp olive oil, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp smoked paprika, ¼ tsp ground cumin, ¼ tsp cinnamon, and salt, to taste until evenly coated.
Then cook using one of these three methods:
Tossing diced sweet potato with seasoning for a savory cottage cheese breakfast bowl
  2. Pan-fry (fastest, about 12 minutes). Heat the seasoned sweet potato in a small nonstick skillet over medium heat. Cook for 10 to 12 minutes, stirring every couple of minutes, until the cubes are golden on the outside and fork-tender inside. Transfer to a plate.
Air fryer (about 14 minutes). Spread the seasoned sweet potato in a single layer in the air fryer basket. Air fry at 380°F for 12 to 14 minutes, shaking the basket halfway through, until golden and tender.
Oven (about 25 minutes, best for batch cooking). Spread the seasoned sweet potato on a parchment-lined sheet pan. Roast at 400°F for 20 to 25 minutes, flipping once halfway, until caramelized at the edges and tender.
Air frying seasoned sweet potato until golden
Cook Your Eggs
  1. Soft-scrambled (about 2 minutes). Crack 2 large eggs into a small bowl with a pinch of kosher salt and whisk until fully combined. Melt 1 tsp salted butter in a small nonstick skillet over medium-low heat. Pour in the eggs and gently push them around with a silicone spatula in slow strokes for about 2 minutes, until they form soft, billowy curds with no liquid runoff. Pull them off the heat right before they look fully set.
Soft-boiled (7 minutes). Bring a small pot of water to a gentle boil. Lower 2 large eggs in with a slotted spoon and set a timer for exactly 7 minutes. Transfer the eggs to an ice bath for 1 minute to stop the cooking, then peel and slice in half. Sprinkle the cut sides with a pinch of salt.

  2. Air fry the eggs alongside the sweet potatoes. If you're going the soft-boiled route, you can drop 2 whole, in-shell eggs straight into the air fryer basket with the sweet potatoes for the last 9 to 10 minutes of cook time (so add the eggs when the sweet potatoes have about 9 to 10 minutes left at 380°F).
Pull the eggs out at the same time as the sweet potatoes, transfer them to an ice bath for 1 minute, then peel and slice. The yolks come out jammy and the whites just set.
Build Your Bowl
  1. Spoon ½ cup cottage cheese into a wide shallow bowl. Arrange the warm sweet potatoes, the eggs (scrambled curds or halved soft-boiled), and ½ small avocado in their own little sections around the cottage cheese.

Top & Serve
  1. Scatter a small handful of microgreens over the top, sprinkle on everything bagel seasoning and a pinch of red pepper flakes, then finish with a light drizzle of extra-virgin olive oil. Eat right away while everything is warm.

Notes

  • Meal prep. Pre-boil your eggs and roast a full sheet pan of seasoned sweet potato cubes on the weekend. Assemble each day just before enjoying.
  • Cottage cheese. Full-fat (4%) cottage cheese gives the creamiest texture against the warm eggs and sweet potato. Low-fat has more protein but is less rich.
  • No microgreens? Baby arugula or thinly sliced scallions both work.
  • Make it spicier. Add a small spoonful of chili crisp under the eggs or swap the red pepper flakes for a drizzle of hot honey.
