Ingredients You’ll Need

For the Lamb Kofta Skewers

  • Ground Lamb — Rich and flavorful, lamb is the heart of this dish and holds spices beautifully for juicy, well-seasoned koftas.
  • Garlic — Fresh garlic adds depth and warmth to both the kofta and the tzatziki.
  • Red Onion — Finely minced for a subtle sweetness and aromatic bite.
  • Fresh Parsley — Adds bright, herbaceous freshness to balance the savory richness of the lamb.
  • Warm Spices — A fragrant blend of ground cumin, coriander, nutmeg, smoked paprika, and Aleppo pepper (or chili flakes) gives the kofta its signature Middle Eastern flavor.

For the Grilled Eggplant

  • Eggplants — Sliced into thick rounds, they become smoky, tender, and slightly caramelized on the grill.
  • Olive Oil — Brushed or sprayed to help the eggplant char and soften without sticking.

For the Tzatziki

  • Persian Cucumber — Grated and squeezed to remove moisture, it brings cool crunch and freshness to the creamy sauce.
  • Full-Fat Greek Yogurt — Rich and tangy, it’s the creamy base for your tzatziki.
  • Lemon Juice & Zest — Brightens everything with fresh citrusy acidity.
  • Olive Oil — Adds body and a luxurious finish to the sauce.
  • Garlic — Just one, grated finely, infuses the yogurt with bold flavor.
  • Fresh Dill — Chopped and stirred in for that signature herby, green tzatziki note.

How to Make Lamb Kofta and Tzatziki

This recipe is easy, fresh, and totally grillable from start to finish. Each component comes together in a couple of simple steps.

Step 1: Make the Kofta Mixture
Pulse garlic, red onion, and parsley in a food processor. Then add to a large bowl and mix with ground lamb and spices until just combined. Shape onto the bamboo skewers and chill to firm. If you’re finding the mixture sticky, run your hands under cold water before forming the kofta.

Step 2: Prep the Tzatziki
Grate, squeeze, and mix the cucumber with Greek yogurt, lemon zest and juice, olive oil, a grated garlic clove, and dill. Salt to taste and chill.

Step 3: Season the Eggplant
Slice and oil the eggplant and sprinkle with salt.

Step 4: Grill Everything
Preheat your grill. Grill the kofta for about 3 to 4 minutes per side, and the eggplant alongside until tender and charred.

If you don’t have a grill, you can also use a griddle pan.

Step 5: Serve & Garnish
Layer eggplant on a platter, top with koftas, spoon tzatziki over everything and finish with herbs or lemon wedges.

Make It Your Own

  • No lamb? Swap for ground beef, turkey, or a plant-based alternative.
  • Add extra veggies: Roast up some peppers or zucchini alongside the eggplant.
  • Make it spicy. Serve with harissa or add extra pepper flakes to the kofta.
  • Craving some carbs? Pair with pita bread or rice.

Tips for the Best Lamb Kofta and Tzatziki

  • Don’t overmix the lamb, or it may become dense.
  • Refrigerating the kofta kebabs before grilling helps them hold their shape on the grill.
  • Be sure to soak your wooden skewers in water for 10 to 15 minutes before forming the kofta. This will prevent them from burning on the grill.
  • Use full-fat Greek yogurt for a creamier, richer tzatziki sauce.

Storage Tips

Leftover Lamb Kofta
Store any leftover kofta skewers in an airtight container in the refrigerator for up to 3 days. Reheat them gently on a grill pan or in a skillet to revive their crisp edges.

Grilled Eggplant
Grilled eggplant can be stored in the fridge for 2 to 3 days. If you’re saving leftovers, store them in an airtight container until ready to enjoy.

Tzatziki Sauce
Tzatziki will keep well in the fridge for up to 3 days in a sealed jar or container. Stir before serving, as some separation is natural. The flavors will intensify over time, in the best way possible. This is the type of sauce that just gets better.

Make-Ahead Tips

  • Kofta mixture can be prepared and shaped up to 1 day ahead and stored covered in the fridge.
  • Tzatziki is even better when made a few hours in advance to let the flavors meld.
  • Eggplant can be sliced and salted in advance, then grilled when ready.

Final Thoughts

There’s something deeply satisfying about a meal that’s both rustic and nourishing, and these lamb koftas strike that balance effortlessly. It’s simple enough for a laid-back weeknight, yet special enough to serve at a summer gathering with wine, candles, and good company.

From the spice-kissed lamb to the creamy, cooling tzatziki and smoky grilled eggplant, every bite is perfectly in balance. Whether you’re cooking for loved ones or just for yourself, let this recipe be an invitation to slow down and savor something delicious.
