FAQ

How do I keep the cheese from turning grainy?

Take the soup off a boil and keep it on warm/low. Add finely shredded cheese a handful at a time, stirring to melt. Block cheese you shred yourself melts more smoothly than pre-shredded.

Can I use different cheeses?

Absolutely. A sharp cheddar base is classic, but a little Gruyère, white cheddar, or Parmesan adds depth. Avoid very aged cheeses because they don’t melt as well.

Can I use Greek yogurt instead of cottage cheese?

Yes, but add it carefully. Blend smooth, temper with hot soup, and stir in off the heat at the very end to prevent curdling. The flavor will be a touch tangier.

Does this freeze well?

Yes, for up to 3 months. For the creamiest result, you can freeze before adding the cheddar, then add cheese after reheating. If freezing fully finished soup, reheat gently and whisk to re-emulsify.

Can I make it without a crockpot?

Totally! This soup can also be made on the stovetop or in the Instant Pot. See the “Other Cooking Methods” section in the post for full directions.
