Why This Chili Is High-Protein and Low-Calorie
This recipe combines lean ground turkey, lentils, quinoa, and beans, which are all rich in protein and fiber.
Plus, it skips excessive oils and fatty cuts of meat that make traditional chili calorie-dense.
The result is a balanced, nutrient-dense meal that’s filling, satisfying, and perfect as a nutritious lunch or dinner.
Key Ingredients
- Lean ground turkey (93–99%): A lean protein source that keeps the chili hearty and filling without adding excess fat. Lean ground beef and chicken are also great.
- Black beans and kidney beans: Add plant-based protein, fiber, and a creamy texture that balances the lean turkey.
- Dry green lentils: Boost protein and fiber while helping the chili thicken naturally as it cooks.
- Quinoa: Adds texture, extra protein, and subtle nuttiness for a balanced, nutrient-rich meal.
- Fire-roasted diced tomatoes & tomato purée: Provide a rich, smoky tomato base that builds flavor right from the start.
- Chili powder and smoked paprika: The key spices for that signature warmth and smoky depth.
- Cocoa powder: A small amount enhances richness and brings out the savory, spicy notes.
- Apple cider vinegar and lime juice: Brighten the final flavor and balance the spices.
- Fresh cilantro: Adds freshness and color just before serving.

How to Make It
Making this high-protein low-calorie chili is simple and comes together in one pot. Here’s how to bring all that rich, smoky flavor together:
Sauté the aromatics
Start by cooking the onion and bell pepper in a bit of olive oil until softened, then add the garlic for a minute to release its flavor.
Brown the turkey
Add the ground turkey to the pot and cook until it’s no longer pink, breaking it up into small pieces for even texture.
Build the spice base
Stir in the tomato paste, chili powder, smoked paprika, cumin, coriander, cinnamon, cocoa powder, and salt. Let the spices bloom for a few minutes to create depth and richness.
Add the rest of the ingredients
Stir in the beans, lentils, quinoa, diced tomatoes, tomato purée, and broth. Mix well and bring everything to a boil.
Simmer until thick
Reduce the heat and let the chili simmer uncovered for about 35 to 40 minutes, stirring occasionally, until the lentils and quinoa are tender and the texture is thick and hearty.
Finish and serve
Stir in the apple cider vinegar and lime juice to brighten the flavor, then ladle into bowls and top with Greek yogurt, sliced jalapeño, and fresh cilantro.

How to Serve
Serve this high-protein chili with simple sides like brown rice, roasted vegetables, or a fresh green salad.
Or skip the rice and add a topping of Greek yogurt or sliced avocado for extra creaminess. It also pairs well with whole-grain crackers or warm cornbread if you want something cozy.
Tips & Variations
- Make it vegan: Swap the turkey for plant-based ground “meat” or add extra lentils and use vegetable broth.
- Adjust the spice: Add cayenne pepper or diced jalapeño for more heat, or tone it down with extra lime juice.
- Add more veggies: Stir in diced zucchini, corn, or spinach for extra color and nutrition.
- Thicken the texture: Let the chili simmer uncovered a bit longer or mash a few beans with the back of a spoon.
- Boost the flavor: Don’t skip caramelizing the tomato paste; it gives the chili its rich, deep flavor.
- Serving ideas: Top with Greek yogurt, avocado, jalapeño, and fresh cilantro for color and freshness.
- Make it yours: Turn leftovers into a new meal by serving it spooned over baked sweet potatoes, stuffed into bell peppers, or mixed with brown rice for a protein-packed burrito bowl.
Storage & Meal Prep
This chili stores well, making it perfect for meal prep. Let it cool completely before transferring to airtight containers. It will keep in the fridge for up to 5 days or can be frozen for up to 3 months.
To reheat, warm on the stovetop over medium heat or in the microwave until hot, adding a splash of broth or water if it’s too thick. The flavors deepen over time, so it tastes even better the next day.

What size is 1 serving?
This recipe makes 6 servings 🙂
Just made this tonight, and although we were a bit concerned at the end there (very very soupy), it turned out fantastic in flavor! Somehow, ours was INCREDIBLY soupy – not something a *little* more simmering or bean mashing could solve for, however we had leftovers, and they were the perfect consistency, I guess from being able to absorb the liquid long-term. Delicious, but probably will only make on special occasion bc it took a WHILE.
Hi Nikki, thank you so much for making it and for the kind review. I’m so glad you loved the flavor! Did you happen to make any substitutions? I double checked the recipe and it shouldn’t turn out soupy, so I’m curious what might have caused that. I’d love to help troubleshoot
My son loved it!
