Key Ingredients

  • Rotisserie chicken: Tender, flavorful, and already cooked, it’s a great time-saving solution. Finely shredding it helps the dressing coat every bite.
  • Greek yogurt: Creates a creamy base that’s lighter than mayonnaise while adding extra protein and tang.
  • Mayonnaise: Adds a touch of richness and that classic chicken salad texture.
  • Parmesan cheese: Finely grated Parmesan brings the salty, nutty flavor that’s key in a Caesar dressing.
  • Lemon juice: Brightens everything and balances the creaminess with a touch of acidity.
  • Dijon mustard: Adds depth and a subtle sharpness that enhances the Caesar flavor.
  • Worcestershire sauce: Brings savory umami notes and rounds out the dressing.
  • Anchovy paste (optional): A little goes a long way in creating that authentic Caesar flavor. Trust me, the chicken salad won’t taste like anchovies.
  • Garlic: Fresh and spicy, it gives the dressing its signature kick.

Storage & Meal Prep

Store your rotisserie chicken salad in an airtight container in the refrigerator for up to 4 days.

Give it a quick stir before serving to refresh the dressing.

If packing for lunches, portion into containers and keep any greens or bread separate until ready to eat.

FAQ

Can I make this rotisserie chicken salad ahead of time?

Totally. This salad actually tastes even better after a few hours in the fridge as the flavors meld together. Store it in an airtight container and enjoy within 4 days.

Can I use leftover cooked chicken instead of rotisserie chicken?

Absolutely. Any cooked, shredded chicken works well. Rotisserie chicken just adds extra flavor and makes prep even faster.

Is this recipe gluten-free?

Yep, the salad itself is naturally gluten-free. Just serve it with gluten-free bread, crackers, or lettuce cups if you want to keep the whole meal gluten-free.

Can I make this rotisserie chicken salad dairy-free?

You can. Swap the Greek yogurt for extra mayo and replace the Parmesan with nutritional yeast or a dairy-free Parmesan alternative.

What’s the best way to serve it?

Try it on toasted sourdough, in a wrap, or scooped into lettuce cups for a lighter option. It’s also great with crackers or raw veggies for a quick snack.
