Looking for a cozy, high-protein breakfast that takes almost no effort? These chai overnight oats are creamy, warmly spiced, and packed with protein thanks to Greek yogurt, hemp hearts, and chia seeds. Perfect for slow winter mornings when you want something nourishing but easy.

In the middle of winter, I’m always looking for breakfasts that feel comforting but fit my protein and nutrition goals. The kind of thing that makes mornings easier, especially when it’s dark, cold, and the idea of cooking before coffee just feels like too much.

These chai overnight oats are inspired by all the cozy flavors I crave this time of year, but packaged into something simple and make-ahead. You mix everything the night before, let the fridge do the work, and wake up to a breakfast that’s ready when you are.

The Greek yogurt, hemp hearts, and chia seeds make them genuinely filling, with enough protein to carry you through the morning without that mid-morning crash. And if you’re trying to be more intentional about hitting your protein goals, adding a scoop of vanilla protein powder blends right in and adds a bit of extra sweetness.

Key Ingredients

  • Rolled or quick oats: The hearty base that soaks up all the chai spices and creates a thick, creamy texture. Use gluten-free oats if needed.
  • Greek yogurt: Adds creaminess and a big protein boost, making these oats truly satisfying.
  • Chia seeds: Help thicken the oats overnight while adding fiber and staying power.
  • Hemp hearts: Mild and slightly nutty, they add extra protein and healthy fats without changing the flavor.
  • Chai spices: A warming blend of cinnamon, ginger, cardamom, cloves, and nutmeg that gives these oats their cozy chai flavor.
  • Maple syrup or honey: Just enough sweetness to balance the spices without overpowering them.
  • Vanilla protein powder (optional): Blends right in for an easy way to push protein even higher while keeping the oats smooth and creamy. Simply Tera’s makes my favorite one.

Tips & Variations

  • Gluten-free: Use certified gluten-free rolled oats to keep these chai overnight oats fully gluten-free.
  • Dairy-free: Swap the Greek yogurt for a thick dairy-free yogurt and use plant-based milk. Adding protein powder helps keep the protein high.
  • Rolled vs. quick oats: Rolled oats give a heartier texture, but quick oats work if you prefer a softer, more pudding-like consistency.
  • Customize with toppings: Finish with toppings of your choice like fresh fruit, nuts, seeds, or a drizzle of nut butter.
  • Stronger chai flavor: Steep a chai tea bag in the milk, let it cool completely, then use it in the recipe.

Storage & Meal Prep

Store these chai overnight oats in an airtight container in the fridge for up to 4 days.

The oats will continue to thicken as they sit, so give them a good stir before serving and add a splash of milk if needed to loosen the texture.

For meal prep, portion the oats into individual jars at the start of the week for an easy grab-and-go breakfast. They’re perfect for busy mornings when you want something filling, cozy, and already taken care of.

Yep, these chai overnight oats are still high-protein thanks to Greek yogurt, hemp hearts, and chia seeds. Protein powder is optional if you want to boost protein even further.

Can I make these dairy-free?

Absolutely. Use a thick dairy-free yogurt and plant-based milk. Adding protein powder helps keep the protein content higher.
