Key Ingredients

  • Rolled oats: The hearty base that gives structure and a subtle nutty flavor. If gluten-intolerant, use gluten-free rolled oats.
  • Vanilla protein powder: Vanilla protein powder adds sweetness and a satisfying boost of protein. This is my favorite brand.
  • Pumpkin puree: Brings moisture and that cozy autumn flavor we all crave.
  • Almond butter: Creamy and rich, it binds the mixture together while adding healthy fats.
  • Maple syrup: A touch of natural sweetness that balances the warm spices.
  • Pumpkin pie spice: A high-quality pumpkin pie spice blend of cinnamon, nutmeg, ginger, and cloves makes these taste like pumpkin pie.
  • Chia seeds: Tiny but powerful, they add fiber, omega-3s, and help the balls hold shape.
  • Mini chocolate chips or pecans: Optional, but they add a little indulgence and extra texture.

FAQ

Can I make these protein balls without protein powder?

Yes! Simply replace the protein powder with extra oats. They won’t have quite as much protein, but they’ll still be delicious and filling. You can also substitute protein powder for collagen powder to keep the protein without the protein powder texture or flavor.

Do I need to bake these?

Nope! These are completely no-bake. Just mix, roll, and chill.

Can I use canned pumpkin pie filling instead of pumpkin puree?

It’s best to stick with pure pumpkin puree. Pumpkin pie filling has added sugar and spices, which can make the balls too sweet and throw off the texture.

How do I keep them from being too sticky?

If the mixture feels sticky when rolling, pop it in the fridge for 10 to 15 minutes before shaping. You can also lightly coat your hands with a bit of coconut oil or warm water.
