Tips & Variations

  • Switch up the greens: Kale holds up beautifully for meal prep, but arugula or spinach work just as well.
  • Add more fall flair: Toss in dried cranberries, roasted pumpkin seeds, or even chopped dates.
  • Make it dairy-free: Swap halloumi for crispy tofu for a dairy-free and vegan (without the hot honey) variation.
  • Shortcut option: Save time by using canned black lentils. Just drain and rinse before adding them to the salad.

Storage & Meal Prep

Store it in an airtight container in the fridge for up to 4 days, but keep the apple cider vinaigrette in a separate jar and add it just before serving to maintain the best texture.

If you’d like to portion it out, divide the salad into single-serving containers for easy grab-and-go lunches and pack the dressing and hot honey on the side.

FAQ

Can I use green or brown lentils instead of black?

Absolutely! You can substitute green or brown lentils if that’s what you have on hand. Just be sure not to overcook them, as they can become mushier than black lentils.

Can I make this salad dairy-free?

Yes. Simply swap the halloumi for crispy tofu bites (see recipe card).

How can I make this salad more filling?

It’s already high in protein, but you can make it heartier by adding grilled chicken, roasted chickpeas, or extra nuts.
