Key Ingredients in Healthy Chicken Chili
- Chicken thighs: Juicy, tender, and more flavorful than chicken breast, they give the chili a hearty, meaty base.
- Chicken sausage: Adds richness and an extra layer of savory flavor that makes this chili so unique.
- Jalapeños & chipotle pepper: Bring just the right amount of smoky heat.
- Crushed tomatoes & tomato paste: Creates a rich, thick base for the chili to simmer in.
- Spice blend: A mix of chili powder, smoked paprika, cumin, coriander, and oregano keeps every bite spiced and warming.
- Cocoa powder & cinnamon: The secret ingredients that add depth, balance the heat, and round out the flavors.

How to Make It
This healthy chicken chili is super simple to make; it just takes a bit of patience while you let the ingredients simmer, meld, and get super tender.
Start by lightly browning the chicken thighs in a large heavy pot or Dutch oven. Once they’re lightly golden, set them aside in a separate bowl.
Cook the chicken sausage, breaking it into small crumbles as it browns. Add the chicken thighs back into the pot so the flavors begin to build.
Add the onion and jalapeños and cook until they soften, then stir in the garlic and chipotle pepper.
Stir in the crushed tomatoes and tomato paste, letting them cook for a couple of minutes to deepen their flavor. Pour in the chicken bone broth or stock, scraping the bottom of the pot to pick up all those delicious browned bits.
Season generously with the spice blend: chili powder, smoked paprika, cumin, oregano, chipotle chili powder, cocoa, coriander, and cinnamon. Add the bay leaves, stir everything well, and bring the chili to a gentle simmer.
Let it cook uncovered for 1 to 3 hours (the longer the better). Before serving, remove the bay leaves and adjust the seasoning to taste. Finish with your favorite toppings like a dollop of Greek yogurt, diced avocado, fresh cilantro, and a squeeze of lime juice.

Storage & Meal Prep
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors only deepen as it sits, so it’s even better the next day.
For longer storage, freeze in individual portions for up to 3 months. Reheat gently on the stove or in the microwave, adding a splash of water or broth if needed to loosen the texture.

FAQ
Totally! Simply leave out the chipotle pepper in adobo and reduce the jalapeños or chipotle chili powder. You’ll still get plenty of smoky flavor without the extra heat.
You can, but chicken thighs stay much more tender during long cooking times.
Absolutely. Freeze in airtight containers for up to 3 months. Thaw overnight in the fridge and reheat on the stove with a splash of water or broth if needed.
Sure! While Kathee’s original recipe is bean-free, black beans, kidney beans, or even chickpeas can be stirred in during the last 30 minutes of cooking.
