Looking for a quick, high-protein dinner you can make any night of the week? Part of my 30 under 30 series, these Air Fryer Honey Mustard Chicken Thighs come together in under 30 minutes and pack 50 grams of protein per serving.
Welcome to my 30 under 30 series, where I’m sharing weeknight dinners that take less than 30 minutes to make and deliver over 30 grams of protein per serving.
This honey mustard chicken is one of those recipes that looks and tastes like you put way more effort in than you actually did. The sauce is two mustards, honey, garlic, and smoked paprika. That’s it.
But it caramelizes in the air fryer into something so much better than the sum of its parts, with just enough sweetness to balance the tang.
Chicken thighs go in first, then the green beans cook in the same basket after. Finish with the reserved sauce as a dipping sauce on the side, and dinner is done.

Why You’ll Love It
- High in protein: Each serving delivers 50 grams of protein, making it a genuinely filling, balanced dinner.
- One basket: The chicken and green beans cook in the same air fryer basket, one after the other. Minimal dishes, minimal cleanup.
- Ready in under 30 minutes: 5 minutes of prep, about 25 minutes of cook time total. That’s it.
- Built-in dipping sauce: You make one sauce and split it. Half goes on the chicken, half stays on the side for dipping. It’s a small move that makes the whole dish feel more complete.
- Flexible: Serve it as-is with the green beans for a lower-carb dinner, or add quinoa, rice, or roasted potatoes to round it out.
Love air fryer chicken? This Air Fryer Chicken Shawarma Bowl is another fast weeknight dinner with bold flavor and 56 grams of protein.
Key Ingredients
- Boneless skinless chicken thighs: Thighs stay juicy in the air fryer in a way that chicken breast often doesn’t. They’re also higher in fat, which means more flavor and better caramelization with the glaze.
- Dijon mustard: Sharp, tangy, and smooth. It’s the backbone of the sauce and helps it cling to the chicken.
- Grainy mustard: Adds texture and a slightly milder, nuttier mustard flavor that balances the Dijon. Using both is what makes this sauce interesting.
- Honey: Just enough to take the edge off the mustard and help the glaze caramelize in the air fryer.
- Garlic: Crushed or finely minced so it works into the sauce rather than sitting on top of it.
- Smoked paprika: Adds a subtle smokiness that rounds out the sauce and keeps it from tasting one-dimensional.
- Fresh green beans: Quick-cooking and sturdy enough to hold up in the air fryer without going mushy.

How to Make It
The chicken cooks first, then the green beans go in right after. Everything comes out of the same basket and is on the table in under 30 minutes.
Make the honey mustard sauce & coat the chicken
Whisk together the Dijon, grainy mustard, honey, garlic, smoked paprika, and salt. Set half the sauce aside. That’s your dipping sauce. Toss the chicken thighs in the remaining sauce until fully coated.
Air fry the chicken
Preheat the air fryer to 400°F. Place the chicken thighs in the basket in a single layer and cook for 20 minutes, flipping once halfway through, until cooked through and caramelized on the outside.
Air fry the green beans
Remove the chicken and set aside to rest. Toss the green beans with olive oil, garlic, and salt and add them to the basket and air fry at 400°F for 8 minutes, shaking the basket halfway through, until tender.
Serve
Plate the chicken alongside the green beans. Add quinoa if you’re going that route, and serve with the reserved honey mustard sauce on the side for dipping.
Have a larger air fryer? If your basket fits both at once, add the green beans to the basket for the final 8 minutes of the chicken’s cook time instead of cooking them separately.

Tips & Variations
- Don’t skip the flip: Flipping the chicken halfway through is what gets you even browning and caramelization on both sides. It takes 10 seconds, and it’s worth it.
- Check your green beans early: If yours are on the thinner side, check them at 7 minutes so they don’t overcook.
- Swap the protein: This sauce works just as well on chicken breast, salmon, or pork tenderloin. Adjust cook time based on thickness and protein.
- Swap the veg: Asparagus, broccoli florets, or snap peas all work in place of green beans. Cut everything to a similar size so it cooks evenly.
- Add a grain: Quinoa is the natural pairing here. It’s got its own nutty flavor that works well with the mustard. Rice or farro both work too.
- Make it a full meal prep: Double the sauce, cook a bigger batch of chicken, and you’ve got lunches for the next few days.
Storage & Meal Prep
Store the chicken and green beans in separate airtight containers in the fridge for up to 4 days. If you’re adding quinoa, store that separately too.
To reheat, warm the chicken in the air fryer at 350°F for 3 to 4 minutes to bring back some of the caramelization, or microwave gently until heated through. The green beans reheat well in either.
Keep the reserved dipping sauce in a small jar in the fridge. It holds for up to a week and doubles as a salad dressing or sandwich spread.
FAQ
You can, but thighs are the better choice here. They stay juicy even if you pull them a minute or two late, and the higher fat content means better caramelization with the glaze. If you use breast, pound it to an even thickness first and start checking for doneness around 15 minutes.
No. The sauce is thick enough that it coats and clings to the chicken without any marinating time. Just toss and cook.
Totally. Bake the chicken on a lined sheet pan at 425°F for 20 to 25 minutes, flipping once halfway through. Roast the green beans on a separate pan or alongside the chicken for the last 10 minutes.
The chicken is done when it reaches an internal temperature of 165°F and the outside is deep golden and caramelized. A meat thermometer is the most reliable way to check, especially since air fryer wattage can vary.
If your air fryer basket is large enough, yes. Add the seasoned green beans to the basket for the final 8 minutes of the chicken’s cook time. In a standard 4 to 5 quart basket, cook them sequentially for best results.
It keeps in the fridge for up to a week and works as a salad dressing, sandwich spread, or dipping sauce for roasted veggies. It’s genuinely good on almost everything.
