If you’re a classic caesar girl, this Caesar Dense Bean Salad is a must-try. All the same flavors you love, but with way more protein and fiber, and it gets better in the fridge, making it perfect for meal prep.
It starts with a base of two kinds of beans, cherry tomatoes, cucumbers, and finely sliced red onion. Then it gets a big handful of grated parm, and it’s all tossed in a creamy high-protein greek yogurt caesar dressing. Garlicky, mustardy, lemony, and perfectly balanced.
Each serving has 42g of protein, under 450 calories, and 12g of fiber.
The whole thing takes about 15 minutes to throw together and holds up in the fridge all week, so you get a super delicious meal-prepped lunch with basically no effort.

Key Ingredients
This caesar is totally customizable, but here are the ingredients I like to include.
- Two types of beans, cannellini and chickpeas. Cannellini are soft and creamy, chickpeas are firm and a little nutty, and together they bring a ton of protein and fiber on their own.
- Diced chicken for an extra bump in protein, and because, well, chicken caesar. Duh.
- A simple homemade greek yogurt caesar dressing with worcestershire, dijon, lemon, garlic, and optional anchovy paste.
- Cherry tomatoes, cucumber, and red onion because an extra serving or two of veggies never hurt anyone.
- A big grating of parmesan, because would it really be a caesar without it?
- Toasted panko breadcrumbs. Totally optional, but if croutons are the best part of a salad for you, why not? Super easy to make and you keep them on the side so they stay crispy all week.

How to Make This Caesar Dense Bean Salad
Just a couple of steps, all completed within 15 minutes and you have a high-protein lunch you can enjoy all week long.

Make the dressing
Add all the ingredients to a bowl, whisk until smooth, and put it in the fridge to let the flavors come together while you prep everything else.

Toast the breadcrumbs
Heat some olive oil in a pan, add the panko, and toast until golden brown. Take it off the heat and stir in the garlic powder. Store separately so they stay crispy all week. Or just use store-bought croutons, if you’re feeling lazy.

Assemble the salad
Drain and rinse your beans, chop your veggies, and toss everything together in a big bowl. Pour the dressing over and mix. Fold in the chicken and that’s it.

Store
For meal prep, divide into six containers. Store the breadcrumbs separately and top right before eating.

FAQ
Violet Witchel created the dense bean salad on TikTok and it kind of took off from there. The idea is you swap out lettuce for beans so you get way more protein, way more fiber, and it actually holds up for meal prep because there’s no lettuce to get soggy.
Whatever you love works here. I like a lighter bean so the caesar flavors come through, but this is totally your call.
For sure. It won’t have quite the same punchy flavor and you’ll lose a couple grams of protein from the greek yogurt, but if that’s easier for you, go for it.
100% Customizations are encouraged. I like it with chicken for the extra protein, but it’s just as good without. You could also do crispy tofu or whatever sounds good to you.

Notes
- Keeps in the fridge for up to 4 days. Add breadcrumbs right before eating.
- Chicken options: Rotisserie chicken is the easiest grab-and-go option. You can also pan-sear chicken breasts (season with salt and pepper, cook 6 to 7 minutes per side over medium-high heat, let cool, then dice) or bake at 400°F for 20 to 22 minutes. Cook ahead of time and let it cool completely before adding to the salad.
- If you want to keep it vegetarian, skip the chicken and the anchovy paste. Still has a solid amount of protein from the beans, greek yogurt dressing, and parm.
