Air fryer chicken katsu recipe served bowl-style with rice, sesame slaw, and tonkatsu sauce drizzle

Alright, I’m gonna come out and say right off the bat, this air fryer chicken katsu bowl is probably not the healthiest recipe on my website, but I do have to say it is one of the most delicious (and it’s substantially healthier than the classic).

This bowl starts with a base of sushi rice, and then a beautiful golden air-fried chicken katsu cutlet on top with a really quick homemade tonkatsu sauce that only requires five ingredients. On the side, you get a delicious, creamy sesame cabbage slaw.

It’s everything you love about a classic chicken katsu, but just slightly healthified, and you’re getting a super delicious and filling bowl for just over 550 calories with over 50g of protein.

The best part: the whole thing comes together in just 30 minutes.

Why You’ll Love It

  • Super crispy without the deep frying. This is the main reason I love an air fryer. A light dredge in panko, and you get a golden, crunchy chicken katsu cutlet that’s just so much healthier than the deep-fried alternative.
  • 30 minutes from start to finish. Whenever I think of dredging something in flour and panko, it doesn’t seem like a simple recipe to me, but you’re going to have to trust me on this one. The whole thing comes together in 30 minutes and is well worth the minimal effort.
  • 52g protein per bowl. This is a much healthier take on the classic recipe and comes to about 550 calories and 52g of protein per bowl. Plus, you’re getting several portions of veggies with the cabbage slaw.
  • Homemade tonkatsu sauce. Just five ingredients mixed in a bowl is all it takes.
  • Way better than takeout. Not only will this take you less time than ordering katsu for delivery, but it’s healthier, more delicious, and SO much cheaper.

Key Ingredients

Four main components are all it takes: lightly breaded chicken breasts, cabbage slaw, tonkatsu sauce, and rice.

  • Chicken breasts. One per serving gets pounded out to about a ½-inch thickness, which is not only super satisfying but also makes the chicken tender and helps it cook evenly.
  • Panko breadcrumbs. These are actually Japanese-style breadcrumbs that are coarser and lighter than the original, and they’re iconic for that katsu crunch.
  • Tonkatsu sauce. It’s actually hard to believe how simple it is to make homemade tonkatsu sauce. All it takes is ketchup, Worcestershire, soy sauce, brown sugar, and a tiny bit of dijon. Just whisk it cold. No cooking required.
  • Finely shredded green cabbage. I like to buy mine pre-shredded and just mix it with a few ingredients to get that classic creamy sesame slaw.
  • Sushi rice. I like sushi rice because it’s a short-grain rice, so it’s stickier and has a really nice dense texture. You can typically find this frozen or in microwave pouches if you want to save a bit of effort.

Victoria’s Tips

Here are a few tips to ensure that you get the best possible air fryer chicken katsu.

  • Don’t skip the pounding step. Using a meat mallet, a heavy pan, or even a rolling pin to even out the chicken breasts not only helps them cook more evenly but also really tenderizes the meat.
  • Spray your breaded chicken breasts with olive oil or cooking spray. This is what turns dry breadcrumbs into a golden crispy cutlet.
  • Shred the cabbage finely. For that classic cabbage slaw, either buy finely shredded cabbage or shred your own using a sharp knife, vegetable peeler, or mandoline.

Storage Tips

Store all components separately in airtight containers. Leftover katsu keeps in the fridge for up to 3 days and reheats best in the air fryer at 375°F for 4 to 5 minutes to re-crisp the coating.

While the katsu reheats, give the cabbage slaw and sauce a good whisk to make sure everything is well combined. Then plate up your bowls.

FAQ

Can I make this without an air fryer?

Totally, you can bake the breaded cutlets at 425°F (220°C) on a wire rack set over a sheet pan until golden and crispy, about 20 minutes. The wire rack is essential because it lets the panko crisp on both sides instead of going soggy on the bottom.

Can I make this recipe gluten-free?

Yep, four swaps and you’re set: use gluten-free panko and flour, tamari in place of soy sauce, and gluten-free Worcestershire.

Can I use different proteins instead of chicken?

Yep! Pork tenderloin or boneless pork chops work great. Just pound them thin in the same style, or you can even use extra-firm tofu, pressed and sliced into thick slabs, then coated. For a vegetarian version, cook time will vary slightly, but if everything is around the same thickness, about ½ inch thick, it will take approximately 10 minutes in the air fryer.

Does this recipe work well for meal prep?

It’s not the ideal meal prep recipe, but you can definitely make it work if you store the components separately and re-crisp the katsu in the air fryer.

Two raw chicken breasts on a white plate next to a meat mallet, ready to be pounded thin for air fryer chicken katsu
  2. Set up three shallow bowls. Add 2 tbsp all-purpose flour to the first. Beat 1 large egg in the second. Stir 1 cup panko breadcrumbs with 1 tsp garlic powder and ¾ tsp salt in the third.

  3. If you want a much healthier version of this recipe, you can also totally skip this step and season your “naked” pounded chicken breasts with salt and garlic powder and air fry per the instructions.
  4. Lightly spray with olive oil spray as you add to the air fryer in a single layer.
Air fry at 400°F for 10 to 12 minutes, flipping halfway, until the panko is golden and the chicken reaches 165°F internally.

Notes

  • No air fryer: Bake the breaded cutlets at 425°F on a wire rack set over a sheet pan for 18 to 20 minutes, flipping halfway.
  • Storage: Leftover katsu keeps in the fridge for up to 3 days.
  • To reheat: Pop the katsu back in the air fryer at 375°F for 4 to 5 minutes to re-crisp the coating.
  • Sauce shortcut: Bottled tonkatsu sauce (Bull-Dog is the classic Japanese brand) works if you’d rather skip the homemade version. Japanese BBQ sauce also works great.
