These Almond Croissant Overnight Oats have all the nutty, buttery flavor of the famous pastry, but in a creamy, high-protein jar with over 40 grams of protein.
I’ve always loved the idea of starting my day with something a little luxurious, like the almond croissant I’d order at a café in Paris.
But as much as I adore the buttery, nutty layers of that pastry, I don’t exactly want to begin my mornings with a sugar crash.
So I turned it into overnight oats.
They have the same cozy, nutty flavor I crave, but with enough protein to keep me satisfied for hours.
Five minutes of prep the night before, and you wake up to something that feels indulgent but actually has 40g of protein behind it.

Key Ingredients
- Rolled oats: I prefer Gluten-Free Quick Oats in this recipe, but rolled oats will also work.
- Greek yogurt: Adds creaminess and a big protein boost so your breakfast actually keeps you full.
- Vanilla protein powder: Brings extra sweetness and structure while getting each serving over 40 grams of protein.
- Almond milk: Keeps the oats creamy with a light, nutty undertone.
- Almond butter: Rich, nutty, and reminiscent of the almond filling in a croissant.
- Almond extract: A little Almond Extract goes a long way for that distinct almond pastry flavor.
- Vanilla extract & maple syrup: Round out the flavor with natural sweetness and warmth.
- Sliced almonds: Add crunch and texture, especially when toasted.

How to Make It
Overnight oats are one of the simplest breakfasts to prep, and this almond croissant version is no different.
Combine all the ingredients except the sliced almonds in a bowl, then stir until well combined and smooth.
Add the almonds and gently fold them into the mixture.
Cover and refrigerate overnight (or at least 4 hours).
Top with extra sliced almonds and a light dusting of powdered sugar.

Tips & Variations
Storage & Meal Prep
These almond croissant overnight oats stay fresh in the fridge for up to four days, which makes them great for meal prep.
Store them in airtight jars or containers so they’re easy to grab on busy mornings. If you’re adding toppings like almonds or powdered sugar, keep those separate until just before serving so they stay crunchy.
The oats will thicken as they sit, so stir in a splash of almond milk before eating to loosen them up.
For the easiest routine, make a batch of three or four jars at once. The flavor actually gets better as the oats rest, so you end up with a week of creamy, bakery-inspired breakfasts with almost no effort.
This High-Protein Strawberry Oat Yogurt Parfait is a mix between a yogurt parfait and overnight oats and delivers the best of both worlds. Great if you’re getting a little sick of oats every morning.
FAQ
Rolled oats and quick oats both work. Quick oats break down more and give you a smoother texture, while rolled oats hold their shape a bit better. Steel-cut oats don’t soften enough overnight, so I’d skip those.
Totally, but the protein count will drop. You can add an extra scoop of Greek yogurt to make up some of the difference or a scoop of collagen powder which is totally flavorless and won’t change the texture.
It makes a big difference in getting that bakery almond flavor, so I’d keep it if you can. If you don’t have it, vanilla extract on its own still tastes great, you just won’t get that almond croissant vibe.
