When it comes to prepping breakfast, it doesn’t have to be a huge project. While I do love a hot breakfast like these Almond Croissant Baked Oats, some weeks call for something super simple.

And yogurt parfaits are perfect for this. You can make them with just yogurt, berries, and granola. Or you can get a little creative with your flavor combos, as I’ve done here.

Key Ingredients

  • Greek yogurt: Thick, creamy, and naturally high in protein. This forms the base of the parfait and helps keep it filling without needing anything extra.
  • Bananas: Fresh banana slices add natural sweetness and that classic banana bread–inspired flavor. Use ripe bananas for the best taste.
  • Protein granola: Adds crunch and extra protein, making this parfait more satisfying than a standard yogurt-and-fruit combo. The Magic Spoon Protein Granola is my favorite.
  • Walnuts: Chopped walnuts bring texture that pairs perfectly with banana.

Tips & Variations

  • Use ripe bananas: The riper the banana, the sweeter the parfait will be without needing anything extra.
  • Swap the nuts: Pecans or almonds work well if that’s what you have on hand.
  • Make it dairy-free: Use a high-protein dairy-free yogurt and a plant-based protein granola. You can mix in some plant-based protein powder if desired.
  • Add protein powder: Mix a scoop of protein powder in with the yogurt for a sweeter and even higher protein option. Simply Tera’s is my favorite.

FAQ

Can I make this banana yogurt parfait ahead of time?

Yep, that’s the idea. You can assemble the parfaits up to 3 days in advance. If you want the granola to stay really crunchy, store it separately and add it just before eating.

What kind of yogurt works best?

Thick Greek yogurt works best for both texture and protein. Plain, nonfat, or full-fat all work depending on your preference.

Is this banana yogurt parfait gluten-free?

It can be. The yogurt, bananas, and walnuts are naturally gluten-free. Just be sure to use a certified gluten-free protein granola, as many granolas contain oats or additives that aren’t gluten-free.
